Every year for the past twelve years we have gathered with some good friends on Halloween. We allow the kids to Trick or Treat, have a quick meal and spend the evening munching on Halloween snacks. After all, the candy has to be inspected before the kids can eat it. Naturally, my favorite candy has to be inspected and eaten by me.  I am always asked to bring the desserts and try to make something different each year.  I knew I planned to make cupcakes, but what kind?  I was trying to think of Spooky Treats when I passed a Fanta sample booth at Walmart.  Boom! A light bulb went off in my head. Why not make Orange Cream filled Cupcakes with Orange Frosting? I could use Fanta for flavoring.  I rushed home to try out my idea. Because I always need to sample it in advance, right?
Here’s what you need to make the cupcakes:
Basic Ingredients for Gluten Free Cupcakes

I wanted Gluten Free cupcakes so I started with a mix, but added extra touches to make it my own.  Begin by making the cupcakes.  Add the mix, butter, vanilla, eggs, sour cream and milk to a large bowl.  Using a mixer, stir until all ingredients are combined. Pour the batter into muffin cups and bake at 350 degrees for about 20 minutes.  Remove the cupcakes from the oven and allow to cool.  Meanwhile, make the filling for the cupcakes.

Mix together the butter, powdered sugar, vanilla, Fanta, and shortening until it is smooth and creamy.  Add a few drops of orange gel paste if desired.

Fanta Orange Frosting
Using a pastry bag and tip, pipe filling into the center of the cupcakes.  Here’s a handy tip: If you don’t have a pastry bag, cut the corner from a sandwich bag, insert a pastry tip and fill with frosting. It’s just as easy to use and is less messy to clean up. Just toss the bag when you are through!

Piping In Filling

I was in a hurry so I made “Cheater’s buttercream frosting.”  I started with a can of prepared Buttercream, then added a couple of tablespoons of butter, vanilla, 2 teaspoons of cream,  enough powdered sugar to make it stiff, and Fanta. I iced the cupcakes and decorated them with cute Halloween picks.  They turned out fabulously, even though I had a hard time keeping the kids away from them until they were done.  I know they will be a hit at the Halloween party this Friday!

Orange Cream Filled Cupcakes with Fanta Frosting (gluten free)

Ingredients
  • For Cupcakes:
  • 1 box gluten free cake mix
  • 2 teaspoons vanilla
  • 1/2 cup sour cream
  • 1 stick of butter, softened
  • 2 tablespoons milk or cream
  • For Filling:
  • 1/4 cup Fanta
  • 1/2 cup shortening
  • 1 cup powdered sugar
  • 1 teaspoon vanilla
  • 2 teaspoons cream
  • 1/2 cup butter, softened
  • For “Fast Frosting”
  • 1 can (8 ounces) vanilla frosting
  • 1/2 cup powdered sugar
  • 1/4 cup Fanta
  • 1 teaspoon vanilla
Instructions
  1. Add vanilla, butter and sour cream to the cake mix. Blend until mixed. Stir in the cream. Pour batter into muffin tins, filling about 2/3 full. Cook for 20 minutes at 350 degrees. Remove from over and allow to cool completely.
  2. While cupcakes cool, make filling. Cream together shortening, butter, powdered sugar and vanilla. Mix in Fanta and cream. Pipe filling into cupcakes.
  3. For frosting: In a large bowl, mix together frosting, powdered sugar and vanilla. Add Fanta and cream if desired. Frost as desired.
