As a YoCrunch Ambassador I get to try their new flavors when they hit store shelves. We eat a lot of yogurt-it’s one of my favorite snack foods-but I also use it in cooking. This month we received the new Pumpkin Pie parfait, made with real pumpkin and cinnamon, and a graham cracker crumble for topping.  Since the weather had turned chilliy, I had been wanting to make a batch of pumpkin muffins but didn’t have all the ingredients. This seemed like the perfect opportunity to “kill two birds with one stone,” so to speak. The pumpkin filling, the yogurt and the topping for the muffins were all included. Here’s my super simple recipe that makes 12 muffins in minutes. They are a great quick breakfast or snack.

A simple breakfast recipe that is perfect for fall.
Ingredients
  • 1 cup all purpose flour
  • 6 tablespoons sugar
  • ¼ teaspoon salt
  • ¼ teaspoon baking powder
  • ¼ teaspoon baking soda
  • 1 egg
  • 2 (4 ounce cups) Pumpkin Pie Spice Yogurt (from a package of four)–set graham cracker topping aside
  • 3 tablespoons canola oil
  • 2 tablespoons milk
Instructions
  1. In a medium bowl, mix together the flour, salt, baking powder, baking soda and sugar. Add egg, oil, milk and yogurt. Mix until blended. Pour batter into greased muffin cups. Top with the graham cracker coating. Bake for fifteen minutes at 350 or until a knife inserted in the muffins comes out clean.

If you would like to try a different flavor that is perfect for fall, YoCrunch also makes an Apple Pie yogurt. Just  follow the recipe and substitute two cups of Apple Pie yogurt for the Pumpkin spice.  An added bonus is that the vanilla yogurt used in YoCrunch is fat free.   25. Those yogurts look so yummy and so does your recipe using them! I love yogurt too- the ones without processed sugar are so good for you (and even with the processed sugar the probiotics help).
