Peeps Peanut Butter Parfait

Peeps, those ooey gooey marshmallow balls of goodness, have evolved over the years since I was a child. Each year my mom, who was the queen of healthy eaters, allowed the Easter bunny to bring me a small hollow chocolate rabbit and a box of peeps .  Now I use peeps year round to make crafts, like these Easter Chick centerpieces or place holders,  and in recipes, like my friend Melanie’s Peep’s Brownies.  This yummy Peeps parfait only has five ingredients plus a Peep and can be prepared in less than ten minutes.  It’s a cute dessert for the kids for an Easter brunch.   I believe simple and fast is the best kind of cooking!

Serves: 8
A quick five ingredient parfait that is perfect for snacks or special occasions. It can be made in a trifle dish instead.
Ingredients
  • 1 (16 ounce) frozen pound cake, thawed
  • 1 (8 ounces) container whipped topping, thawed
  • 1 cup (8 ounces) peanut butter
  • 1 package (6 ounces) chocolate pudding mix
  • 3 cups (24 ounces) milk
  • 8 Bunny Peeps
  • 8 popsicle sticks or lollipop sticks
Instructions
  1. Slice pound cake into eight pieces. Cut each slice of pound cake into cubes. Meanwhile, in a medium bowl, mix chocolate pudding mix and milk, stir until blended.
  2. In another medium bowl, mix peanut butter and cool whip until blended. In each of the eight parfait dishes, place the cubes from one slice pound cake. Top each piece cake with 3 tablespoons peanut butter mixture. Layer chocolate pudding over peanut butter mixture. Attach one bunny peep to each lollipop stick. Place into the parfait.

Did you know Peeps has several new flavors available? My favorite is the Dark Chocolate Covered Peep.  I sneaked those out of the box and kept them for myself.  I am so stocking up on these before they disappear!  The kids found the Milk Chocolate Mousse Chocolate Dipped Peeps and the Chocolate Peepsters and  thought they were in Peeps heaven.
