Herbed Potatoes and Onions Recipe

One of my goals this year is to find quick, easy recipes that the entire family will enjoy. This is no easy feat, especially when I have to factor in food allergies. I dug out one of my old recipe books and began searching for ideas. I happened across this herbed potatoes and onions recipe and realized it had only four ingredients. That’s my kind of recipe! I made it for dinner one day and we finished the meal with an empty bowl. I knew it was a hit when my daughter called me and told me the kids had asked if I would make them more “smtatoes.” The answer was yes. Yes, I would.

Herbed Potatoes and Onions

This recipe is great because it’s allergy friendly. It’s gluten-free, dairy-free, and vegan. If those things scare you and you think you the potatoes will be lacking flavor, give it a chance. You’ll be pleasantly surprised at how good this tastes. It also freezes well. When I’m preparing the recipe, I usually chop up extra onions and potatoes, mix them up and place them in the freezer. On days I am too busy to cook, I pull them out and know I will have a side dish in a hurry.

Here’s all you need to make the herbed potatoes and onions:

Potatoes- use your favorite type; red, Yukon gold, Irish
Onions-use a mild sweet onion. I like to use Vidalia onions when they are in season.
Oil or butter- I use olive oil to make it vegan, but if you prefer the taste of butter, feel free to substitute
Instant Onion Soup Mix- If you need it to be gluten-free, be sure to check the package. Not all brands are gluten-free.

Herbed Potatoes and Onions Recipe
Recipe Type: Side dish
An easy four-ingredient recipe that’s gluten-free, dairy-free, and vegan.
Ingredients
  • 5 medium potatoes
  • 1 medium onion
  • 1/4 to 1/2 cup olive oil OR 1/2 cup butter, melted
  • 1 package Instant Onion Soup Mix
Instructions
  1. Preheat oven to 350 degrees.
  2. Cube the potatoes and place in a large bowl.
  3. Dice the onion and add to the potatoes.
  4. Add the onion soup mix and the olive oil.
  5. Stir the potatoes and onions until they are coated with the onion soup mix.
  6. Spray a 9″ by 9″ baking dish with cooking spray,
  7. Pour in the potato and onion mixture.
  8. Bake for 25 to 30 minutes. The potatoes should be soft.

Freezing Directions

Place the chopped onion and sliced potatoes in a gallon sized freezer bag.
Add the Instant Onion Soup Mix and shake until coated.
Place bag in the freezer until ready to cook.
When ready to prepare the potatoes and onions, allow the bag to thaw in the refrigerator for several hours.
When the potato mixture is thawed, add olive oil to the bag and toss to coat.
Spray a 9″ by 9″ baking dish with cooking spray. Place the potato mixture in the into a preheated 350-degree oven and bake until potatoes are soft, usually 25 to 30 minutes.

The herbed potatoes and onions recipe has become a family favorite and the kids usually ask for it about once a week. It’s a great recipe for the beginning cook and simple enough the kids can help. The toddlers in the family enjoy tossing the potatoes and onions with the oil and soup mix.
