Have you seen the latest craze in chocolate cakes? It seems every restaurant I visit has their own take on flourless chocolate cake. That’s great, because this cake is naturally gluten free for those on special diets, but is something everyone can enjoy. Our version of the best flourless chocolate cake recipe is designed to be made with less mess and less fuss. Why dirty up every bowl in the kitchen or bake a cake in a water bath when you can do it the easy way? One word of warning: this cake does have to set in the fridge for several hours, but it can easily be made the day before.

The Best Flourless Chocolate Cake Recipe

This cake is thick, fudgy and oh, so chocolate-y. The trick to the perfect chocolate cake is allowing it to bake slowly on a low temperature. If you bake the cake at a higher temperature, it will cause the center to fall. While the cake sounds a little complicated to make, the actual hands on prep time is only fifteen to twenty minutes.

Ingredients for Flourless Chocolate Cake:
Chocolate-The recipe calls for bittersweet, I used 70% dark chocolate bars, which was a little too tart for me, so I added some milk chocolate to balance it out. Use a good quality chocolate bar- you can taste the difference.
Butter
Eggs
Sugar
Water (one of the “secret” ingredients to keep it moist
Cornstarch
Vanilla Extract
Salt

Directions:
Important! Do this first! Turn on oven to preheat the oven to 275 degrees.
Step 1. Melt the chocolate and butter together and mix until smooth. (I melted the chocolate and butter mixture in the microwave. To do this, be sure to melt it at 50% power or it can scorch.) Set aside to cool for 5 minutes.
Step 2. In a large bowl, mix together eggs, sugar, water, cornstarch, vanilla and salt until blended.
Step 3. Stir chocolate mixture into egg mixture.
Step 4: Pour the mixture into a springform pan. Allow the pan to set on the counter for 10 minutes to allow air bubbles to rise to the top. Gently pop any air bubbles with a fork.
Step 5: Bake for 45 to 50 minutes. The edges should be set, but the center of the cake should still jiggle.
Step 6: Let the cake cool for 20 to 30 minutes and place in refrigerator for 6 hours or overnight until set.
