Easy Homemade Vietnamese Spring Roll Recipe

One of our favorite appetizers or light lunches is Vietnamese spring rolls. For a while, we required take-out whenever we wanted to indulge, but after a visit to a Vietnamese restaurant in Pennsylvania that offered a “build your own spring roll” option, we realized that it wouldn’t be hard to make our own version of their spring rolls and spring roll sauce! All you need are some fresh veggies, a protein, and spring roll wrappers.

It may take a while to get the hang of actually making the rolls. Expect some ugly rolls and some busted rolls when you first try this recipe! Don’t worry- those are still edible, and it’s a good excuse to sample what you’re making before anyone else gets a bite! If your family is anything like ours, you’ll be fighting over the last spring roll!

To make it feel more like you’re sitting in your favorite Vietnamese restaurant or enjoying some carry-out, we’ve included a recipe for an easy dipping sauce.

Vietnamese Spring Roll Recipe

Spring roll recipe:
Ingredients: 

Rice paper
1 cucumber
1 carrot
1/2 medium white onion
1 package small shrimp
1 bunch fresh cilantro OR 1 bunch fresh mint OR 1 bunch basil
1 package rice noodles

Dipping sauce Ingredients:
1/4 cup Soy sauce
1/4 to 1/2 cup Orange marmalade, depending on thickness you want
1 teaspoon Sugar (optional)
Mix soy sauce and orange marmalade together until blended. Stir in sugar, if desired.

Directions:
To make the spring rolls, begin by cooking the shrimp and rice noodles according to the package directions. While they are cooking, julienne the carrots and cucumbers. Thinly slice the white onion, and prepare a bowl of warm (not hot!) water to soak the rice paper. Tear the herb of your choice into small pieces. Once everything has cooked, dip a piece of rice paper into the warm water for about five seconds until it becomes soft and pliable, but not mushy. Layer a small portion of rice noodles, carrot, cucumber, onion, and shrimp inside the roll, topping with a few pieces of mint, cilantro, or basil. Tuck the bottom and top edges of the rice paper wrapper over the filling, then fold the rest of the rice paper over the filling to form a roll. This step takes practice!
