One of my favorite activities is cooking dinner with my kids. We gather in the kitchen, talk and create tasty dishes. I usually have a general idea of what I want to make so I find a recipe and begin adapting it to suit our tastes. That’s how I came up with the idea of Creamy Mushroom and Bacon Gnocchi. The kids and I brainstormed what would go well into a basic recipe and then went shopping at World Market in their Italian International Foods Section where I found Santini Mixed Wild Mushrooms and Gia Russi Tri-Colored Gnocchi . This recipe can be served for a romantic dinner, for guests, or just because. It looks difficult and time-consuming but it comes together quickly.

A delicious dish for mushroom lovers, featuring several types of mushrooms, crispy bacon and a touch of cheese.
Ingredients
  • 2 (.88 ounce) bags Santini Mixed Wild Mushrooms
  • 1 (8 ounce) package Baby Bella mushrooms, sliced
  • 1/2 cup button mushrooms, sliced
  • 2 teaspoons garlic, minced
  • 4 tablespoons butter
  • 8 slices bacon, cooked and broken into pieces
  • 1 cup Chardonnay
  • 1 teaspoon each salt and pepper
  • 1 1/4 cup heavy cream
  • 2 (16 ounce) packages Gia Russa Tri Color Gnocchi
  • 1/2 cup chopped onion
  • 1.2 cup grated Asiago cheese
Instructions
  1. Add Santini mushrooms into a small bowl and cover with hot water. Let soak 15 minutes. Squeeze water from mushrooms. Place butter in a large skillet, let melt. Add the garlic and onions. Saute until golden. Add the Santin mushrooms, baby bellas and button mushrooms. Saute three minutes. Stir in Chardonnay, heavy cream and salt and pepper. Cook five minutes, stirring often. Stir in cheese until melted. Add bacon. Stir until blended. Serve over Gnocchi. Garnish with additional cheese if desired.

Peachy Limoncello

To add some pizazz to our meal, I whipped up a Peachy Limoncello Mocktail for the kids.  It only has two ingredients, Torani Peach Syrup and  World Market All Natural Limoncello Sorrento-Style Soda.  Just mix 8 ounces of Limoncello with 3 ounces of Peach Syrup. Stir and serve.  I know this was a hit because the kids asked for another glass after finishing the first one. I recommend chilling both the Limoncello and the Peach Syrup before use because I thought it tasted better cold.
