My parents were not big on birthday parties when I was young.  To my mom, having a party meant hours and hours of planning, baking and decorating. She spent so much time worrying about the party she didn’t have any fun.  I decided my kids parties were not going to be this way. I wanted time to enjoy our family and friends, not spending all my time in the kitchen.  Here’s my secret: (sssh! Don’t tell!) Sometimes using prepackaged items, like Mrs. Fields Nibblers can be a lifesaver.  No birthday party backlash for me! Tea party? No problem. Girl’s night in? Got it covered. 

Naturally, the kids wanted to “test taste” the three flavors we received, Milk Chocolate Chip, Peanut Butter, and Double Chocolate Fudge, but I told them we didn’t want to eat them all straight out of the box, though it was tempting.  I wanted to show how we could use these soft, succulent morsels for entertaining.  I was able to whip up four of these delicious Ice Cream Cookie Parfait in less than ten minutes.  Tip: Make sure the ice cream is solidly frozen before using. Otherwise it melts fast!  Ready to make these for your next family night or girl’s night in? Here’s how:

A quick and easy ice cream and cookie parfait.
Ingredients
  • 12 Mrs. Fields Nibblers in the flavor of your choice or use a variety
  • 2 cups (16 ounces) ice cream
  • 4 teaspoons chocolate fudge topping
  • 1 package (3 ounces) cheesecake pudding mix
  • 2 cups milk
Instructions
  1. Mix cheesecake pudding mix with two cups milk; set aside. Crumble cookies into a small bowl. In four parfait glasses,add two tablespoons cookie mixture to each. Top each cookie with 1/2 cup ice cream. Layer two more tablespoons cookie mixture over the ice cream into each parfait glass. Over the cookie mixture, add 1/2 cup pudding mixture. Top each parfait with one teaspoon ice cream topping and sprinkle with remaining crushed cookie mixture. Serve immediately or store in the freezer until ready.

Need some other ideas? How about making ice cream sandwiches? Just spread some ice cream between two Mrs. Fields cookies and place them in the freezer until ready to serve. If you need a more grown up treat, how about a cookie bar? Place Mrs. Fields cookies on toothpicks and add a chocolate, caramel or marshmallow fondue. Serve with your favorite cocktail or mocktail.

As for the next kid’s tea party, I know what I will be serving! Mrs. Fields has found her way to my heart; delicious and easy to please the entire family.

  25. This is still work for sure. I love the recipe too! Great ideas. I always had a birthday party when I was a kid. It wasn’t fancy like today going somewhere different. We had cake and ice cream and games at home. We always had fun!

  74. Love what you made!!! I have been snacking on these babies, too. My favorite is probably the peanut butter ones. They are all pretty much the best cookies EVER.
