Peach Rum Sauce Recipe

Georgia is not called “the Peach State” for nothing. When my son and I took a day trip into the north Georgia mountains we stopped in the little town of Ellijay. What this town lacks in size it makes up for in the volume of peaches and apples it produces each year. We came home with a bushel of peaches, leaving me wondering, “What am I going to do with all these peaches?” A quick search of the internet brought up a Peach Rum Sauce recipe.

I found the recipe on the Ball Canning Fresh Preserving website and adapted it to add more flavor and less sugar. I didn’t finish the canning process with my sauce and instead decided to freeze it. Either way you go, this sauce is delicious served with pork or used as a dessert sauce with ice cream. How’s that for versatile?

What You Need:

Peaches- You’ll need to peel them and chop them into pieces
Lemon-Lime Soda- I used this to keep the peaches from turning brown. You can use diet soda if you want.
Brown Sugar- this need to be loosely packed, so just pour it in the cup without bothering to tamp it down with your spoon
Rum-I used Bacardi
Almond Extract-Use pure extract and not imitation. It just tastes better.

How To Make It:

1. In a large bowl, mix the peaches and soda together until blended. Stir in the brown sugar until it is dissolved.
2. Pour in the rum and almond extract. Mix until blended.
3. Put the mixture in a large saucepan over high heat and bring it to a boil. Stir it often until it reaches boiling.
4. Now comes the easy part. Reduce the heat to simmer. Let it simmer for 20 to 30 minutes until the mixture is reduced by half and it has thickened. Walk by the stove every so often and give it a good stir.
5. Remove it from the heat and allow it to cool for 30 minutes at room temperature.
6. Ladle it into pint cans to follow a traditional canning process or into pint freezer containers. Enjoy the deliciousness.

<h2>Cooking Tips:</h2>

  • This recipe is gluten-free IF made with the following brands of plain rum: Bacardi, Cruzan, Mount Gay, Myer’s, and Rondiaz. Don’t use flavored rums as most of them contain gluten.
  • If you prefer not to use lemon-lime soda to prevent the peaches from discoloration, you can coat them with an acidic juice, like pineapple, lemon, or orange. Or you can use a commercial discoloration product (like Fresh-Fruit.) You can find these in most grocery stores in the canning section.
  • If you prefer, you can substitute vanilla extract for the almond.

Freezing Tips:

  • Be sure the mixture has cooled to room temperature before placing in the freezer. Adding hot foods to the freezer can cause surrounding items to melt and refreeze.
  • Leave 1-inch of space at the top of the container for expansion.
  • This should make about 3 1/2 pints of sauce.

Ingredients

  • 6 cups peeled and pitted peaches, chopped

  • 1/3 cup lemon-lime soda

  • 2 cups brown sugar, lightly packed

  • 3/4 cup plain rum

  • 1 teaspoon almond extract

Directions

  • In a large bowl, add the peaches and lemon-lime soda. Toss to coat. Stir in the brown sugar until the sugar is dissolved.
  • Stir in the rum and almond extract until blended.
  • Place the mixture in a large saucepan and bring to a boil over high heat, stirring often.
  • Reduce the heat to simmer and cook for 20 to 30 minutes or until the mixture is thickened and reduced by half, stirring occasionally.
  • Remove from heat and allow to cool to room temperature. Ladle into pint freezer containers leaving 1-inch space at the top for expansion.
