Hidden Bunnycakes Cupcakes Recipe

Here comes Peter Cottontail… except he’s hiding in these clever cupcakes. ย The kids will be able to find ears and a tail among the grass and jelly beans. ย I ‘ve included a homemade recipe but if you’re in a hurry used a boxed mix and add the chopped Hershey’s eggs to the batter.

Hidden Bunnycakes cupcakes are a sweet Easter treat with the bunny “hidden” in the grass.
Ingredients
  • To Make Cupcakes
  • Ingredients:
  • 1/2 cup softened butter
  • 3/4 cup sugar
  • 2 eggs
  • 2 tsp. vanilla extract
  • 1-1/2 cups all-purpose flour
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 2/3 cup cold milk
  • 16 Hershey’s eggs, unwrapped and chopped into small pieces
  • To decorate cupcakes:
  • Ingredients:
  • 64 Jolly Rancher Jelly Beans, 4 per cupcake
  • 1/2 cup coconut
  • 1 drop green food coloring
  • 8 large marshmallows, cut in half
  • Pink Sprinkles
  • 16 mini marshmallows
Instructions
  1. Directions to make Cupcakes:
  2. Cream butter and sugar together in a large bowl. Beat in eggs. Combine flour, baking powder and salt. Sift flour mixture into butter mixture and mix well. Add vanilla and milk, beat until well blended. Stir in chopped eggs. Pour into greased cupcake pans and bake at 350 degrees for 25 minutes or until done. When cupcakes are cool, frost with buttercream frosting. Makes 16 Cupcakes.
  3. Directionsto decorate cupcakes:
  4. Place coconut in a small bowl. Add green food coloring and mix until all coconut is tinted. Top frosted cupcakes with tinted coconut. Split marshmallows almost completely with a wet knife to make ears. Add pink sprinkles to ears and place in middle of cupcakes. Place mini marshmallow behind “ears” for the tail. Add four Jolly Rancher jelly beans to each cupcake.
