Chocolate Dipped Coconut Macaroons Recipe

These cookies are a little more time consuming than some of my other recipes but everyone raves about the taste of them. You don’t have to add chocolate but it gives the cookies a flavor boost. Chocolate can also be drizzled across the top of the cookie if you want to be fancy.

Ingredients needed:

4 large egg whites
1 1/2 teaspoons vanilla
2/3 cup sugar
1/4 cup all-purpose flour
3 1/2 cups sweetened flaked coconut
2 tablespoons butter
4 ounces of milk or semisweet chocolate, grated

Directions: 
Beat egg whites on high speed of electric mixer until frothy. Add vanilla, sugar, and flour and mix until well blended. Stir in coconut.  Drop dough in 1-tablespoon portions, onto buttered cookie sheets. Bake in a 325° oven until macaroons are golden, about 20 minutes. Remove from oven and cool completely.  Microwave  butter and chocolate often for 45 seconds. Stir. Microwave 45 more seconds or until chocolate mixture is melted. Mix until smooth. Hold each macaroon on one edge and dip the  other side into chocolate to coat half of the cookie. Place the  macaroon on a wax paper Chill the  uncovered macaroons  until chocolate is firm or around 30 minutes.
