Gluten Free Chocolate Chip Granola Parfait Recipe

Finding healthy snacks for my Celiac daughter can be a challenge.  She wants food that tastes good and I want food the entire family will eat.  As my son says, “You never know what you’ll get with Gluten Free food. It’s either really good or really bad. There is no in between.”  I always have a package of snack bars in the pantry, so when This Kid Saves Lives bars asked me to try their product, I was all ears. Not only are the bars gluten free, gmo free and nut free, they contain 14 essential vitamins and minerals.  Because my kids are not big breakfast eaters- they like to sleep until the last possible minute- I used the bars to make a quick and easy parfait.  This has two advantages; the kids get breakfast and I, not the early morning person, can fix breakfast in a couple of minutes.  Like most of my recipes, this one has few ingredients and you can substitute the flavors to your taste.
Granola Parfait

For each parfait you’ll need one chocolate chip This Kid Saves Lives. bar, one cup of vanilla yogurt and one banana, cut into slices. Crumble the chocolate chip bar.  In a parfait glass, place 1/4 cup yogurt into the glass, top with a tablespoon of crushed chocolate chip bar. Add banana slices on top. Continue repeating layers. Or make it easy on yourself and place 1/2 the cup of yogurt in the glass, and top with 1/2 of the chocolate chip bar and 1/2 of the banana, then repeat the layers. I’m all about easy morning recipes!

Gluten Free Chocolate Chip Granola Parfait Recipe
Ingredients
  • 1 cup vanilla yogurt
  • 1 This Kid Saves Lives chocolate chip bar, crumbled
  • 1 banana, sliced
Instructions
  1. Layer 1/4 cup of yogurt into parfait glass. Add 1 tablespoon of chocolate chip bar and banana slices. Repeat layers until all the ingredients are used.
