Gluten Free Chai Latte Cupcakes

“Mom, can you make me some cupcakes?” my daughter asked. This would be no problem, except my daughter has Celiac disease, requiring her to shun gluten. Making gluten free foods can be tricky. They’re either really good or well, total flops. Using a plain gluten free cake mix to make the cupcakes can leave us with cupcakes tasting like cardboard and making them from scratch requires the use of more flours than I have in my home. Seriously, the last time I wanted to prepare gluten free cupcakes from scratch the recipe required seven different types of flour. I could have purchased three dozen gourmet cupcakes for the cost of flour! Thankfully, last year I was able to chat with Pam from I’m A Celiac and she suggested I take a basic mix and jazz it up a little to give it flavor. I did and the rest is history. I’ve made all sorts of cupcakes, including our latest creation, Chai Cupcakes. They’re a different cupcake, full of subtle Chai flavor.  Even my son, the hater of (almost) all things gluten free said, “These are actually good.”

If you want a stronger Chai taste, just add another tablespoon of Chai latte mix to the batter.  You can use any frosting you would like on these, prepared from a can or made from scratch. I have a homemade Buttercream frosting recipe here. You can also add a teaspoon of chai latte mix to the frosting if you would like it to have more chai flavor.

Gluten Free Chai Latte Cupcakes
Recipe Type: Dessert
Ingredients
  • 1 package yellow gluten free cake mix
  • 1 cup sour cream
  • 2 eggs
  • 2 tablespoons butter, melted
  • 1 teaspoon vanilla
  • 3 tablespoons Instant Chai Latte Tea mix
  • Frosting of choice
Instructions
  1. Mix cake mix, sour cream, butter, eaggs, vanilla and chai latte tea mix together until blended. Pour into muffin cups and bake 15 to 20 minutes or until a knife inserted into the center of the cupcakes comes out clean. Allow to cool. Frost as desired.

  6. I love tea. I love the process of making tea. It took me a long time try a Chai Latte. I could never get with milk in my tea. I do like the spice flavor to it and I sure like it as a baked good. These sound yum.
