Gluten Free Caramel Banana Parfait


Sometimes I have a major craving for ice cream; a “how fast can I get into the car and zip to the store” kind of craving. Unfortunately, there were several problems with this craving, the main one being the amount of calories ice cream can pack. I had made eating healthier a priority this year, but still had those twinges of cravings for my favorite comfort snack. Then I had an Eureka! moment as I was passing by the new Yoplait Greek 100 Whips!, who are sponsoring today’s article, “Why not make Yogurt Sundaes? They’re just as decadent and delicious as my ice cream sundae, but have a lot less calories.” The downside to the snack is they are gluten free and look so tasty that before I can finish preparing my sundae one of the kids comes along and says, “Can I have this when you’re through making it?”
Caramel Banana Parfait

It’s so simple to make, with only four ingredients and a prep time of less than five minutes.  Here’s what you will need:

I started with a carton of Yoplait Greek 100 Banana Caramel flavored yogurt (love this stuff! It has a permanent place in my fridge.) I spooned half of the yogurt into a parfait dish and topped it with slices of banana. On top of this I added 1/2 carton of Greek 100 Whips! Vanilla Cupcake.  The Greek 100 Whips taste amazingly like whipped cream and add the layer of creamy goodness all sundaes need. I finished by drizzling caramel ice cream topping over the top and adding a banana slice for garnish.

Caramel Banana Sundaes

A four ingredient dessert that’s gluten free and delicious.
Ingredients
  • 1 carton (5.3 ounces) Yoplait Greek Banana Caramel 100 Calorie Yogurt
  • 1 carton (5.3 ounces) Yoplait Greek Vanilla Cupcake 100 Calorie Whips!
  • 1 banana, sliced
  • 2 tablespoons caramel ice cream topping
Instructions
  1. Divide the carton of Banana Caramel yogurt between two parfait glasses. Place 1/2 of the banana slices in each parfait glass on top of the yogurt. Top each parfait glass with 1/2 carton Vanilla Cupcake Yogurt. Drizzle each parfait with 1 tablespoon caramel ice cream topping. Top with a banana slice if desired.
