Frosty Fruit Salad Recipe

During the summer months I spend a lot of my time trying to find ways to cool off. One way is to avoid heating up my kitchen. To do that I turn to my arsenal of recipes I keep for “summer use.”  They taste good, don’t require much time or effort on my part and can be whipped up with ingredients I always keep on hand.  I received this recipe from a family member who served a large bowl of this at a family reunion. She went home with an empty plate!  If you are looking for a fancier touch, serve the mixture in individual sherbet bowls or parfait dishes.  With a little whipped cream and a cherry, younger kids will think they are having a fruity ice cream type snack.

Sometimes I use sugar free pudding instead when I am giving this dish a healthier twist.  Ingredients can be substituted too.  If you don’t have pineapple on hand, use peaches. If you don’t have cherries, use strawberries.  Switch out the puddings, use lemon, banana, or whatever floats your boat. One small warning: If you use fresh fruit, add a small amount of sugar or artificial sweetener.  It probably won’t be sweet enough without it.

This fruity salad satisfies a sweet tooth and can be adapted as a diabetic recipe.
Ingredients
  • I banana, sliced
  • 1 (16 ounce) can pineapple chunks, drained (reserve the juice)
  • 1 (8 ounce) can maraschino cherries, drained
  • 1 package (3 ounces) instant vanilla pudding
  • whipped topping, optional
Instructions
  1. Combine the banana, pineapple chunks and maraschino cherries into a medium bowl. Sprinkle the instant pudding over the fruit. Add the pineapple juice and mix well. Cover and store in the freezer until ready to serve. Top with whipped topping, if desired.
