Delicious Corn Salad Recipe

It’s still warm and sunny in the South, making me wish for cool, creamy side dishes that don’t take much time in the kitchen. One of my favorites is this delicious Corn Salad recipe. It’s perfect for picnics, impromptu get-togethers, and holiday celebrations because it takes around 10 minutes to make. It’s good served at room temperature, but it tastes even better chilled.

Delicious Corn Salad Recipe

One of the things I love about this recipe is how versatile it is. It’s naturally gluten-free and dairy-free so I can serve it to all the family members with allergies. If I want to make it vegan, all I have to do is switch the regular mayo for vegan mayo. I recommend starting with about 1/4 teaspoon each of salt and pepper and then adjusting it to taste.
Corn Salad

What You’ll Need

2 (15.25 ounces) can whole kernel corn, drained
1 1/2 cups chopped broccoli OR cauliflower, uncooked
1 small onion, diced
1/2 cup mayonnaise
1 cup chopped tomatoes
salt and pepper (to taste)

How to Make it

1. In a medium bowl mix corn, cauliflower, onion, and tomatoes.
2. Add salt and pepper to taste.
3. Stir in the mayonnaise until corm mixture is completely coated.
4. Chill until serving.

Cooking Tips

*You can use a mixture of broccoli and cauliflower if you like.
*Feel free to add in extra veggies that you like. You can add a can of English peas if you like. Just be sure to drain them first!

  10. The corn salad reminds me of the delicious hominy salad my grandma used to make. You’re certainly right about chilled or room temperature salads being yummy this time of year. It’s hard to top an easy to make dish that has so many extra additions available, including green peas , tomatoes, or broccoli.
