Coconut Peanut Cookies

Since my daughter has gone gluten free, thanks to being diagnosed with Celiac disease, I’ve had to adapt recipes to create treats she could enjoy.  Truthfully, it has been a challenge. The texture of some of the baked goods we make is described by the kids as “weird,” as in “This tastes good, Mom, but the texture is weird.  In other words, it’s not the same as if I had used flour.  We’ve also been trying various Gluten Free foods.  This week we tried Earth Balance Crunchy Coconut and Peanut Spread.  What’s different about this spread? Here’s a list of its attributes:

  • Vegan
  • Gluten-Free
  • Expeller-Pressed Oils
  • Sweetened with Agave
  • ALA Omega-3s
  • Non-GMO Project Verified
  • 100% Natural
  • 0g Trans Fat *

This spread does need to be stirred before use but can be used in sandwiches, for dips, and of course, for recipes. I made Coconut Peanut Cookies and they were delicious. I wanted to forget the cookie and just eat the dough!  If you don’t like coconut, leave it out and substitute the Earth Balance Peanut Spread instead. I liked the addition of the peanuts in the crunchy version, but they can be made with creamy if you prefer.

A gluten free cookie that packs a huge taste. This can be made with creamy or crunchy spread and without coconut if preferred.
Ingredients
  • 2 eggs, lightly beaten
  • 1 cup Earth Balance Coconut Peanut Spread, crunchy or creamy
  • 1 1/2 teaspoons vanilla
  • 1 1/2 cups sugar (use plain white sugar–brown sugar tastes good in the cookie but will cause the cookies to spread)
  • 1/2 cup coconut
Instructions
  1. Mix eggs, vanilla, sugar and peanut spread until well blended. Add coconut and mix well. Drop by rounded tablespoons onto a greased baking sheet. Using a fork, make two crisscrosses on the cookie to flatten. (These can also be baked in mini muffin cups, if desired.) Bake five to eight minutes at 350 until cookie is light brown.

  1. These sound good. I always try to keep coconut oil on hand when I am baking sweets. When I use coconut oil, my treats always taste better.

    my sister LOVES coconut. like crazy. she used to tell me she was making my birthday cake- coconut- so she could have extra. meanie!! LOL

  3. Coconut and peanut butter are two of my favorite tastes in the world. Unfortunately I had to give up peanut butter and peanuts because they started giving me migraines. But I can still have coconut. These look delicious.

    These sound heavenly! (pinned!) Wehavenot gone gluten-free,but we are tryingto diversify our diets and are drawing on recipes from GF, Vegetarian,Vegan, even Paleo and Raw Vegan. These look like a wonderful on-the-go breakfast or snack.
