Chocolate Caramel Truffle Brownie Bars Recipe

Everyone needs at least one easy dessert during the holiday season. I found mine when I made this Chocolate Caramel Truffle Brownie Bars recipe.  I served this on Thanksgiving at our extended family gathering and was repeatedly asked, “How did you make this? It’s delicious!” It is rich enough that a small piece will satisfy you, with its 3 layers of brownie, chocolate mousse and caramel mousse. Of course, I’m all about taking shortcuts whenever I can. The brownie base of my creation is actually Annie’s Organic Double Chocolate Brownie Mix. (Ssh! It will be our secret.)  Annie’s products -there’s a bunch!-have no high fructose corn syrup, no hydrogenated oils and use unbleached flour. Chocolate Caramel Truffle Brownie Bars Recipe:

Tip: This recipe doesn’t take a lot of hands on prep time, but it does take a while to make due to chilling times, so plan accordingly when making.

To Prepare the Brownies: Start by preparing the brownies as directed on the package. To bake, use and 8″ by  8″ pan. I line mine with waxed paper for easy cleanup and easy removal from the pan.    Bake at 350 degrees until brownies are done. The baking time might have to be increased slightly longer than the package calls for to allow for the extra thickness. Allow the brownies to cool to room temperature.

While the brownies are baking, prepare the mousse.  Mousse can be notoriously difficult to prepare, so I use the easiest version available.  I tried the dessert both ways (using homemade mousse and the easy version, and found the easy version is still tasty and so much easier and quicker to prepare.)

To make the easy version of  mousse, you’ll need milk chocolate chips, heavy whipping cream, and whipped topping.  Melt the chocolate chips with a small amount of whipped cream.  Allow the mixture to cool to room temperature and mix with slightly thawed whipped topping.  Chill the chocolate mousse until thickened. (I placed mine in the freezer for faster chilling.)

For the caramel truffle layer, you’ll need canned Dulce de Leche and whipped topping. Slowly mix the Dulce de Leche into the whipped topping until blended.  Allow to chill  until thickened. (Tip: Chilling time can be reduced by cooling the caramel truffle layer in the freezer.)

To prepare the cake:  Place the brownie layer onto a cake plate. Cover with the chocolate mousse layer, spreading evenly. Top the chocolate mousse layer with the caramel truffle layer.  Place in the fridge or freezer and chill for an hour.  Drizzle with chocolate sauce and top with fresh whipped cream, if desired. (Tip: You can use purchased chocolate sauce or make your own by melting milk chocolate chips with heavy whipping cream until melted.)  Slice into bars, if desired. The bars (or cake, if you prefer not to cut it into bars) must be stored in the fridge or freezer.

Ingredients
  • 1 package Annie’s Organic Double Chocolate Brownie Mix, prepared as directed on package
  • For Caramel Mousse:
  • 1 can (11 ounces) Dulce de Leche
  • 1 container (12 ounces) whipped topping
  • For Chocolate Mousse:
  • 1 package (12 ounces) milk chocolate chips
  • 1/2 heavy whipping cream
  • 1 container (12 ounce) whipped topping
  • For Topping: 1/4 cup chocolate fudge ice cream topping
Instructions
  1. Prepare brownies as directed on package. Bake at 350 degrees F in a greased 8″ by 8″ pan 25-30 minutes. Remove brownies from oven. Allow to cool to room temperature.
  2. To make caramel mousse: Mix together the can of Dulce De Leche and whipped topping until blended. Chill 30 minutes. Store in freezer until ready to use.
  3. To make Chocolate Mousse:
  4. Mix chocolate chips and cream together over low heat, stirring constantly, until melted. Remove from heat and allow to cool to room temperature. Stir in whipped topping and chill 30 minutes.
  5. To assemble brownie bars:
  6. Place brownie layer on cake pan. Spread chocolate mousse layer over brownies. Spread caramel truffle layer over chocolate mousse layer. Drizzle with chocolate fudge. Store in fridge or freezer until serving.

Although this recipe is a little complicated  due to the chilling times and is definitely a lot of calories, it’s the perfect holiday treat. You’ll be asked to prepare this dessert again and again!
