Chicken Salad Club Sandwich Recipe

It’s summer and the living is easy, unless it comes to cooking.  It’s hot outside and my kitchen is even hotter inside. I spend a lot of my time trying to plan meals the family will eat without sacrificing taste or heating up the oven.  I’m all about shortcuts too. After all, why spend time inside working in the kitchen when I can be outside doing something fun?  I found a recipe for Chicken Club sandwiches at All You online, and immediately proceeded to make it into a chicken salad type sandwich with all the fixings.  I try to make sneaky substitutions to make my recipes more healthful (although not to the point of adding broccoli to my popsicles, like one mom I know.) My trick? I used Arnold Healthfull Bread. It has no artificial flavors, colors or preservatives, no high fructose corn syrup, and 13 grams whole grains a serving.  Did I mention each serving only has 80 calories? The perfect way to get my carb fix for the day!

Here’s how you can get this sandwich on the table in minutes. My first shortcut is perfect for days I have too much going on to worry about cooking. I purchase a rotisserie chicken and shred it for my meat. (If you have leftover meat, just wrap it tightly, label it, and place it in the freezer for another meal.) Add salt, pepper, chopped onion, lemon juice and flavored mayo to taste. I used chipotle mayo, but use whatever flavor floats your boat.

Now pile on the toppings. I added lettuce, tomato and pickles, but feel free to go wild.  Add olives, spinach leaves, green pepper, avocado or whatever veggies you like.  This sandwich satisfied the men in my life, who think all meals should have meat as the main ingredient, and me, who prefers the veggie plate.

Chicken Salad Club Sandwich Recipe
Ingredients
  • 8 slices bread
  • 3 cups chicken, shredded
  • 2 teaspoons lemon juice
  • 1/2 cup onion
  • 1/2 cup mayo in flavor of your choice
  • Extra toppings:
  • Any veggies of your choice, avocados, olives, lettuce, tomatoes, green peppers, spinach, etc. Add a slice of cheese in your choice of flavor to the sandwich, if desired.
Instructions
  1. Mix chicken, lemon juice, onion, and mayo. Spread on four slices of bread. Add veggies and cheese of your choice, if desired.

  1. What a great looking chicken salad sandwich! My go-to meal in the summer is a tomato sandwich. It’s a southern thing. I used to have them with my grandmother all the time. I love them. 🙂 MMMMmmmm!
