The Best Strawberry Swirl Pound Cake Recipe

Pound cakes remind me of my childhood. Sitting outside, swatting mosquitoes and munching on a piece of pound cake while listening to my relatives discuss the latest family happenings was the perfect way to end a day, especially if homemade ice cream was involved. I was browsing through an old(er) Southern Living cookbook recently and found a recipe for a strawberry cream cheese pound cake I remembered from my childhood. Naturally, the next time I was at ALDI, I picked up the ingredients to make a moment of my childhood.  Here’s the best strawberry swirl pound cake recipe ever (or at least to me.)

This strawberry pound cake takes some work, but the results are worth it! Before beginning the recipe, gather all your supplies, preheat the oven to 350 degrees and grease and flour the bundt pan.  Be sure to soften the butter and cream cheese. I do this by microwaving them for approximately 15-20 seconds.  These are all important steps to make it easier!

In a LARGE bowl, cream the butter until it is fluffy. Add the sugar, one cup at a time, and beat after each addition.
Add the cream cheese and beat well. The eggs need to be added one at a time, with each egg completely beaten into the batter before adding the next. The mixture should be smooth and creamy after adding the eggs.

Add flour, 1/2 cup at time, beating after each addition. Stir in the flavorings, just until blended.  The mixture will be very thick. Pour 1/3 of the batter into the bundt pan. Add strawberry glaze, one teaspoon at a time to the batter. Swirl the mixture with a fork.  Repeat this step once and then top with the remaining cake batter.

Bake at 350 degrees for 1 hour to 1 hour and 10 minutes, or until a knife inserted into the cake comes out clean.  Allow to cool for one hour. Serve with whipped cream and fresh strawberries, if desired.

Strawberry Swirl Cream Cheese Pound Cake Recipe
Ingredients
  • 1 1/2 cups butter, softened
  • 3 cups sugar
  • 1 (8-oz.) package cream cheese, softened
  • 6 large eggs
  • 3 cups all-purpose flour
  • 1 teaspoon almond extract
  • 1/2 teaspoon vanilla extract
  • 2/3 cup strawberry glaze
Instructions
  1. Begin by preheating the oven to 350 degrees. Beat butter until creamy. Gradually add sugar, beating well after each addition. Add cream cheese, beat until mixture looks thick and creamy. Add eggs one at a time, beating gently after each.
  2. Add the flour 1/2 cup at a time to the butter mixture. Blend after each addition. Stir in the extracts, almond and vanilla, beat just until combined.
  3. Pour 1/3 of the batter into a bundt pan which has been greased and floured. Drop strawberry glaze onto batter. Twirl gently with a knife to make swirls. Add another 1/3 of the cake batter, drop more swirls of strawberry glaze and swirl again. Top with last 1/3 of the batter.
  4. Bake for 60 to 70 minutes at 350. When cake is done, remove from oven and allow to cool for 15 or 20 minutes. Remove cake from pan and allow to completely cool before serving. Top with strawberries and whipped cream if desire.
