Peanut Butter Ice Cream Pie Recipe

Who doesn’t love chocolate and peanut butter? Mix it together into an ice cream pie and you have a treat you can serve at special occasions or an afterschool treat. But what if I told you making this recipe could help your school? No, I’m not talking about making one for the school bake sale or for your favorite teacher, although I am sure they would appreciate it! It’s because the crust is made with Reese’s Peanut Butter Cup Cereal and each box has General Mills Box Tops for Education. I used a tart pan with fluted edges to give the pie a look similar to a peanut butter cup. I began by crushing my Reese’s Puffs Cereal in the blender and adding butter. This is the base. I added it into the tart pan and topped it with ice cream. I used vanilla, but chocolate or a version with peanut butter would be good too. Be sure to let this freeze until firm (at least a couple of hours) before adding the topping!

While the pie is freezing, make the topping. You’ll need chocolate chips, peanut butter, powdered sugar, butter and evaporated milk. Melt all the ingredients together and allow them to cool completely while the pie is freezing. If you don’t follow this step, you’ll have a big melting mess.

Spread the topping over the ice cream and place back in the freezer. I know it will be hard to wait the couple of hours it takes to freeze, but it will be worth it, I promise.

Ingredients:
3 cups Reeses Puffs Cereal, crushed
4 tablespoons butter, melted (divided into 2 tablespoons each)
3 cups ice cream, your choice of flavor
¾ cup each: peanut butter, chocolate chips and powdered sugar
½ cup evaporated milk

Mix Reese’s Puffs and two tablespoons butter together. Press into an 8″ pie crust or tart pan. Top with ice cream. Allow to freeze for two hours. Meanwhile mix peanut butter, chocolate chips, powdered sugar, evaporated milk and butter in a small saucepan. Stir over medium heat until blended. Allow to cool. Spread cooled chocolate mixture over top of ice cream and allow to freeze for two hours.
