Homemade Taquito Recipe

When your husband is a Spanish interpreter at the biggest hospital in the region, he will meet a lot of Spanish-speakers. When he meets a lot of Spanish-speakers, you’re going to be eating a lot of Latin food. From pupusas to tamales to carne asada, the majority of our menu at our house and with friends is  Mexican food (or Latin food). When Hormel offered to send us a taco night kit to try out their new refrigerated taco meats of course we said yes! To give our taco night a twist (and because we’ve been watching lots of cooking shows lately), we decided to have a taquito night instead! We’re a fan of easy Mexican recipes so we adapted this Taquito recipe into an easy tasty dinner.

This delicious easy Taquito Recipe is perfect for when you have a craving for Mexican food. The creamy filling is simple to make. It's one of our favorite Mexican recipes.

For the uninitiated, taquitos are meat and cheese- and sometimes beans- rolled up into a corn tortilla and pan- or deep-fried. The beauty of taquitos, like tacos, is that you can put just about anything you want in or on them!
Easy Taquitos Recipe.

We started with a base of Hormel Beef Taco Crumbles and Hormel Shredded Taco Chicken. The meat is pre-cooked and pre-seasoned, so if you’re in a rush, you could just heat it up and throw it in some taco shells with no problems! Since we had time to kill, we mixed it with cream cheese, quesadilla cheese, cilantro, and chives to make the filling for our taquitos. We added one scoop of filling to each corn tortilla, then it was time for them to hit the pan!
Taquitos Recipe using Hormel Taco Meat

Ingredients:
1 package Hormel taco meat
1/2 package cream cheese (4 ounces cream cheese)
2 green onions, chopped
Cilantro to taste (optional)
1 package corn tortillas

Directions:
Combine all ingredients except for the corn tortillas in a bowl and mix well. Once combined, take one spoonful of meat mixture and place in the center of the corn tortilla. Roll the tortilla into a tube shape, and place in a shallow pan of hot oil. Cook until golden brown, flipping once.

Recipe Tip: the fresher the tortillas, the better. Packaged tortillas may need to be heated up in the microwave before the filling is added, to make them more pliable.

Taquitos aren’t taquitos without sauce, so while the taquitos were frying, Justin whipped up not one but TWO  taquito dipping sauces! We went with a guacamole and a pico de gallo. Look for our recipes next week. A blended salsa verde would also go well with these taquitos.

Once the taquitos and salsas were done, we set out the salsas along with sour cream and extra quesadilla cheese. We served the taquitos and let the dipping begin! There were no taquitos left by the end of the meal!
