One of my favorite memories from childhood was our family reunions, filled with a groaning table full of desserts. I had a mean sweet tooth and this was one of the few times each year our family had sweets. Sometimes I like to recreate some of our family recipes, but I try to make them a little lighter. Thanks to Yoplait Greek 100 Whips!, I was able to recreate our lemon torte recipe on the lighter side. This torte looks pretty enough for special occasions, but is easy enough to make for dessert tonight.
Here’s what you need to make it:
To save time I started with a purchased angel food cake and split it in half. I mixed 3 lemon meringue Greek 100 Whips! and the fresh lemon juice with light whipped topping. I spread the yogurt mixture onto half the cake.
I replaced the top of the cake. Then, I mixed a meringue from egg whites, cream of tartar, sugar and vanilla. I added a cup of Greek 100 Whips! in Vanilla Cupcake to the meringue mixture. I spread the meringue along the top of the cake. To give it a little extra oomph, I garnished it with fresh lemon slices.
This cake brought back all of the memories, but half of the calories. I
- 1 ready made (16 ounces) Angel Food Cake
- 3 containers (4 ounces each) Lemon Greek Whip 100 Yogurt
- 3/4 cup (6 ounces) whipped topping , I used light
- 2 Tablespoons fresh lemon juice
- 4 egg whites
- 1 teaspoon cream of tartar
- 1/2 cup (4 ounces) sugar
- 1 teaspoon vanilla
- 1 container Vanilla Cupcake Greek Yogurt Whips!
- Split the Angel Food Cake in half. Mix the Lemon Greek Whip 100 Yogurt , lemon juice and whipped topping together. Spread the yogurt mixture over one half of the cake, reserving 1/4 cup yogurt mixture. Replace the top half of the cake over the whipped topping. Set the cake aside.
- Mix the egg whites and cream of tartar together. Beat until stiff peaks form. Add sugar,vanilla and container of Vanilla Cupcake Greek Yogurt Whips. Spread the meringue on top of the cake. Garnish with lemon slices. Store in the refrigerator.

What a great idea to add in the Greek yogurt to make a flavored topping like that. It’s a total no-brainer but I never thought to do that. You’re adding flavor and not a ton of sugar or calories.
