Bunny Bottom Cookie Cake Recipe

I try to make a special treat for every holiday. Everyone expects caramel pie for Christmas Eve,  Bunny pancakes for Easter, and homemade ice cream for the 4th of July.  For Easter this year  I decided to try something a little different. I received a cute bunny bottom from Oriental Trading and thought, “Why not make a Bunny Bottom something?” But what? My criteria for this dessert included a minimal prep time,  a handful of ingredients, and a high cuteness factor. I had a package of sugar cookie mix and the idea for a Bunny Bottom Cookie Cake recipe was born.  Best of all, this recipe can easily be made gluten free so the entire family can enjoy it.

Easy Bunny Bottom Cookie Cake Recipe

You can make the base of the cake with either a package of sugar cookie dough mix prepared as directed on the package, or a package of refrigerated cookie dough.  I spread the cookie dough evenly across the bottom of a cake pan and baked it for around 15 minutes. Tip: For easy cleanup use a piece of waxed paper on the bottom of the cake pan. Once the cake is done, you can lift it out of the pan with minimal fuss.

After the cake cooled, I spread green tinted buttercream frosting across the top of the cake.  If you’re in a hurry, you can use a container of purchased whipped frosting. Once I finished frosting the cookie cake, I added Twizzlers Easter Grass Green Apple Licorice Twists as grass. If you have Celiac, replace this with green tinted coconut.
Bunny Butt Easter Cookie Cake

I sat the Bunny Bottom on top of the cake and surrounded it with Dubble Bubble Egg Hunt Gum, but you could use jelly beans or any other egg shaped candy.  I think the result was adorable and received several compliments on my cake.

I plan on having Easter dinner on our patio, so I arranged a dessert bar using cute Easter supplies from Oriental Trading. I placed the Bunny Bottom Cake on one side and added a row of Chocolate Bunny Shaped Eggs to the background. I filled each egg with a piece of candy to make cute party favors.  I also made a cute centerpiece using a plain white plate, some mini chocolate Easter eggs, Twizzler’s Easter grass, and a cute Easter figurine. The entire sideboard was put together in around fifteen minutes, including making the centerpiece.

Bunny Bottom Cookie Cake Recipe
This is the easy recipe with only a few ingredients!
Ingredients
  • 1 (16 ounces) package refrigerated sugar cookie dough (to make gluten free, use gluten-free sugar cookie dough)
  • 1/2 package Twizzlers Easter Grass Licorice (to make gluten-free, substitute green tinted coconut)
  • 18 Double Bubble Easter Eggs (Gum) You can substitute other candy eggs or jelly beans.
  • 1 carton whipped vanilla icing, tinted green (use a few drops of food coloring)
  • 1 bunny bottom topper
Instructions
  1. Spread sugar cookie dough evenly over a 9 inch round cake pan. Bake at 350 degrees for 10-15 minutes or until cookie dough is done. Allow cookie to cool completely.
  2. Frost cooled cookie with green tinted icing.
  3. Top cake with Twizzlers Easter Grass or tinted shredded coconut.
  4. Place bunny bottom topper in the middle of the cake.
  5. Place Dubble Bubble eggs around the bunny bottom.
  6. Spread additional licorice around outside of cake.

    We are so excited for spring and we love celebrating Easter with our family! We made these cute Bunny Bottom cookies using our soft sugar cookie recipe with butter cream frosting. No special cookie cutter needed. We just used a round glass and an oval lid we found in the house!
