Cream Filled Chocolate Cupcakes-Gluten Free Goodies

I had six weeks to plan my daughter’s wedding.  “No problem,” I thought, “I can pull this off.”  She has Celiac, which limited my options on cake, but I planned to let the local gluten free bakery handle the cake.  Imagine my shock when the gluten free bakery closed the same week my daughter announced she was getting married! I had no clue what to do. The closest gluten free bakery was two hours away. I didn’t have time to spend a four hour round trip to pick up a cake the day before the wedding.  “I will make the cake myself,” I declared. “You really wanted cupcakes instead of a cake, right?” I was pretty sure cupcakes would be easier to decorate.  I was right! These cupcakes turned out beautifully. No one could tell they were gluten free even though I cheated and used a boxed mix!

Cream Filled Chocolate Cupcakes-Gluten Free Goodies

A semi-homemade recipe that takes like you made it from scratch.
Ingredients
  • For the Cake:
  • 1 box gluten free chocolate cake mix, prepared as directed on the package.
  • To the prepared batter add 1/2 cup sour cream & 1 teaspoon vanilla.
  • For the filling:
  • 1 (8 ounce) package cream cheese, softened
  • 1/3 cup granulated sugar
  • 1 egg
  • dash salt
  • 1 cup white chocolate chips OR 1 cup chocolate chips
  • Ingredients for Buttercream:
  • 1 stick unsalted butter, softened but not melted (1/2 cup)
  • dash salt
  • 2 tsp. each, vanilla and almond extract
  • 1 1/2 to 2 cups powdered sugar
  • 2 tablespoons milk
Instructions
  1. Line muffin cups with paper liners. Fill each muffin cup halfway with the chocolate batter. Add a tablespoon of the filling mixture and cover with chocolate batter. Bake 20 to 25 minutes. Remove from heat and allow to cool before frosting.
  2. To make frosting:
  3. Cream the butter and salt until blended. Add the powdered sugar and mix well. Add the two tablespoons of milk and beat until smooth. If frosting is not the desired consistency, add one more tablespoon milk. Beat in the almond and vanilla extracts. Pipe onto cupcakes.

Learn from my mistakes!  Do not try to freeze gluten free cupcakes to frost later unless you want a soggy mess you can’t serve to guests. Wait until the cupcakes are completely cooled to frost, especially if you are planning on making decorations on top.  It’s also important not to microwave the cream cheese to get it soft. Just let it set on the counter for a couple of hours. When make the filling, be sure not to over beat, only mix it enough to ensure it doesn’t have lumps.

The cupcakes, despite the original batch, turned out delicious and looked so pretty.  I want to make these again and try different types of chips, like butterscotch or peanut butter.
