Do you have a bag of coconut flakes sitting around the house and a craving for cookies? I did. I wanted something the entire family (except for my gluten free daughter) could eat. I found a recipe for Chocolate Chip coconut cookies and changed it around to include white chocolate chips for my allergic to chocolate husband. I also added some ingredients to make them super fluffy and chewy. The result was delicious. These cookies are great served straight from the oven with a glass of milk or after they have cooled.

A yummy twist on a classic chocolate chip cookie. Substitute chocolate chips, peanut butter chips or add a mixture of all three for a deliciously different taste.
Ingredients
  • 1 cup butter
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 cups white chocolate chips
  • 2 cups flaked coconut (I used unsweetened)
  • 2 Tablespoons milk
Instructions
  1. Preheat the oven to 375 degrees F. Using a large bowl, add the butter and both sugars. Cream until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla and milk. Combine the flour, baking soda and salt; stir into the creamed mixture. Add the white chocolate chips and coconut. Drop by rounded spoonfuls onto cookie sheets.
  2. Bake for 8 to 10 minutes or until the cookies are lightly browned.
