Vegan Chocolate Peanut Butter Ice Cream Recipe

Summer is the time for ice cream! There’s nothing better than a bowl of rich, creamy deliciousness on a hot afternoon. Every year we have a tradition of making a couple of freezers of homemade ice cream. This year my daughter has been having health problems dealing with her food allergies all summer. She’s been in and out of doctor’s offices and the hospital more times than I care to count. When I offered to make our annual sundae bar at a cookout with friends, she was bummed. “I want ice cream too!” Being the amazing and awesome mom that I am, (unless you ask my kids), I told her I would make a substitute. She wasn’t thrilled, but this vegan, gluten free and dairy free peanut butter ice cream is a great way to beat the heat. We adjusted the recipe until we found a combination we liked because she wanted a stronger taste of peanut butter. If you prefer not to have as much peanut butter, just add less.
Chocolate Peanut Butter Ice Cream

Here’s what you need:

The secret to having super creamy ice cream is to freeze the bananas before you begin the process. Helpful hint: Always peel the bananas and chop them in half before you begin. It will make the entire recipe so much easier!
Chocolate Peanut Butter Vegan Ice Cream

When the bananas are frozen, add them to the blender, along with the peanut butter and cocoa. You can also add a teaspoon of vanilla if you like, but it’s not required. Mix the ingredients on smoothie setting until they are completely blended. Serve immediately or store in the freezer until ready to serve.

Chocolate Peanut Butter “Ice Cream”
Ingredients
  • 3 bananas, peeled and sliced
  • 1 tablespoon cocoa powder
  • 1 cup peanut butter (I use smooth)
  • 1 teaspoon vanilla (optional)
Instructions
  1. Freeze bananas. Add frozen bananas, cocoa powder and peanut butter to blender. (And vanilla, if using). Blend until smooth. Serve immediately or place in freezer until ready to serve.
