Do you ever have days when you just don’t feel like cooking? I do. I’m exhausted, I’ve been rushing all day, you know the drill. Even when I don’t feel like cooking, I want my family to have a healthy meal. I just want it to be quick and easy. I was at Sam’s Club last weekend, attempting to plan my family meals, when I came across a demo for Tyson Chicken Nuggets and Del Monte Green Beans. They smelled so good and I was hungry. I know to never shop when I am hungry but I stopped for a sample. Sherry, the friendly demo lady, and I chatted for a bit. I found myself talking about healthy meal solutions for time crunched days. She told me Tyson Chicken nuggets are 100% natural and, judging from all the kids crowding around the demo with their parents waiting for their sample, a kid pleaser as well. I know my kids certainly enjoy them!
Although my kids like chicken nuggets and green beans served together as a meal, I decided to dress them up a little. I knew I could make a simple kid pleasing meal that would be perfect on nights I am busy or nights when we have something to do. I whipped up a Chicken Nugget Casserole and Cheesy Green Beans . The nine year old has been excited about seeing EPIC The Movie, which will be released in theaters this Friday, May 24th and this may be our dinner before attending the movie.

Cheesy Chicken Nuggets

Cheesy Chicken Nugget Casserole

A new use for Chicken nuggets. Treat the kids to this hearty casserole from Taste of Home magazine.
Ingredients
  • 32 frozen chicken nuggets
  • 1/3 cup grated Parmesan cheese
  • 1 can (26-1/2 ounces) spaghetti sauce
  • 1 cup (4 ounces) shredded part-skim mozzarella cheese
  • 1 teaspoon Italian seasoning
Instructions
  1. Place chicken nuggets in a greased 11-in. x 7-in. baking dish. Sprinkle with Parmesan cheese. Layer with spaghetti sauce, mozzarella cheese and Italian seasoning.
  2. Cover and bake at 350° for 30-35 minutes or until chicken is heated through and cheese is melted.

Cheesy Green Beans

Cheesy Green Beans Recipe
• 2 cans (15 ounces each) green beans, drained
• 1/4 teaspoon each salt and pepper
• ½ cup shredded Cheddar cheese
• 1 tablespoons butter, cut in small pieces
• ¼ cup skim milk
• ¼ cup seasoned bread crumbs

Directions:
Put beans in shallow buttered baking dish. Sprinkle with salt, pepper, Add the shredded cheese; dot with  butter, then pour milk over the mixture. Stir until blended. Sprinkle bread crumbs over mixture. Bake at 400° for 20 minutes, or until hot and bubbly. Serves 4.
