There’s nothing better than a family movie night, especially when it’s a movie the entire family can enjoy. We watched Miracles from Heaven, starring Jennifer Garner.  The movie is based on a true story of the Beam Family, whose young daughter who has a rare disease. After a near death experience where she sees Heaven, she begins a miraculous recovery.  It’s a touching story made even more poignant because I also have a daughter with a rare disease.  Prompted by the story, I decided to share with my daughter (and with you all!) my mom’s favorite cake. She had a daughter three months ago, and I hope she will pass this recipe down to her child.  This is the best Apricot Nectar Cake recipe ever.
Family Movie Night Ideas

This recipe has been in our family for as long as I can remember. I’m not sure where my mother first found the recipe, but I still have her copy, written in her neat handwriting.  Whenever I make it, I think of all the love and pride my mom put into each cake she made to share with friends and family.

Apricot Nectar Cake Recipe:

This recipe starts with a basic lemon cake mix with a few extra ingredients added. Mix the cake mix with oil, sugar, apricot nectar and beat until blended.
How to Make an Apricot Nectar Cake

Mix in the eggs, one at a time, and blend after each addition. Add the batter into a greased bundt pan, and bake for 50-60 minutes, or until a knife inserted into the cake comes out clean.
Apricot Nectar Cake Instructions

Allow the cake to cool 10 minutes before turning out onto a cake dish. You can add a delicious icing, made with lemon juice and confectioner’s sugar or serve it plain. Either way, it’s delicious!

The Best Apricot Nectar Cake Recipe
This yummy cake is so moist and has a rich citrus flavor. It’s good with or without icing.
Ingredients
  • 1 (18.25 ounce) package lemon cake mix
  • 1/3 cup white sugar
  • 1/2 cup vegetable oil
  • 1 cup apricot nectar
  • 4 eggs
  • Optional Icing Recipe:
  • 1 cup confectioners’ sugar
  • 2 tablespoons lemon juice (I use one large lemon and squeeze out the juice)
Instructions
  1. Grease and flour a 10 inch bundt pan. Preheat oven to 325 degrees.
  2. Combine lemon cake mix with sugar, cooking oil, and apricot nectar. Beat with mixer until mixture is completely blended. Add eggs one at a time, making sure each is completely blended into the batter before adding the next egg. Pour batter into pan.
  3. Bake for 50 to 60 minutes or until a knife inserted into the center of the cake comes out clean. Cool for 10 minutes in the pan before removing cake.
  4. In a small bowl, mix lemon juice with confectioners’ sugar until you reach desired consistency. I like for my icing to be thicker so I use more sugar. If you prefer a thinner icing, use less confectioner’s sugar and more lemon juice. Drizzle glaze over sides of warm cake.

    How do you make the nectar? I am a neebie…

    • I don’t make the nectar. I purchase a can of it! It’s much easier. You can find 12 ounces can. I purchase mine at the local Walmart. It’s usually located near the Mexican/Hispanic food section. I use Goya and it sells for 50 cents a can in our area.

  6. Just before my grandma passed away some years ago she gave me her recipe for her version of this. It’s by far everyone’s favorite when I make it for holidays or special occasions. Growing up I only knew it as a “Grandma Jones cake.” And I try to make mine with as much love as she did.

    • Hi Nikki, Sorry, but dried apricots won’t work. It’s the juice that makes it moist. You could also chop them up and add them into the batter for added flavor though!
