Slow-Cooker Taco Casserole Recipe

Casseroles are a way of life for those of us who live in the South.  We take our casseroles seriously.  It wouldn’t be a church dinner, potluck dinner with friends or family reunion without an abundance of casseroles.  The casseroles are usually even named after the person who makes the best tasting version. When I asked my kids and Bryan what type of casserole they wanted,   I received three votes for “Eulene’s Chicken Casserole” and one for “Grandmother’s Hamburger Corn Casserole.”  I stated that the chicken casserole might not photograph well and the kids informed me, “Casseroles aren’t supposed to look good, they are supposed to taste good.”

We eventually agreed on Taco Casserole, a quick and easy recipe given to me by my mother-in-law, which served with a salad, makes a complete meal.  We added shredded lettuce, tomato, salsa and sour cream to the top of each serving and everyone in the family gives it two thumbs up.

A quick and easy casserole with a Mexican twist that will please the entire family.
Ingredients
  • 1 pound hamburger meat
  • 1 package taco seasoning mix
  • 3/4 cup water
  • 8 ounces sour cream
  • 4 ounces shredded Mexican cheese
  • 2 teaspoons Country Crock
  • 1 refrigerated pizza crust
  • 1/2 cup crushed nacho flavored chips
  • Optional: shredded lettuce, sour cream, tomato and salsa.
Instructions
  1. Brown the hamburger meat and drain. Return to pan and add the taco seasoning mix, water and sour cream. Cook ten minutes, stirring occasionally. Meanwhile, place the pizza crust in a greased 9 x 13 inch pan, pulling some dough up the sides. Pour the meat mixture onto the pizza crust. Top with the shredded cheese. Melt the Country crock spread, mix with the chips and sprinkle over the cheese. Bake for twenty minutes in a 350 degree oven. Top with lettuce, tomato, salsa and sour cream if desired.
