St. Patricks Day Rainbow Cookies Recipe

These cookies look complicated to make and do take a few minutes to ice but come together quickly. They are so much fun to make and kids love to help decorate them.

Ingredients:
1 package refrigerated sugar cookie dough
1/2 cup flour
1 container vanilla frosting
Blue Food Coloring  (I used Wilton Paste Food Coloring because of the variety of shades I can create)
Orange Food Coloring
Green, Purple and Red Glitter Icing
12 Rolo Candies
24 Yellow Mike & Ike candies, cut in half

Directions:
Mix Sugar Cookie dough and flour in a large bowl until completed blended. Roll dough onto into a 1/2 inch thick sheet. Use a circle cookie cutter to cut out twelve cookies. Place the cookies onto a greased cookie sheet and bake until light brown. Remove from oven and use a pizza cutter to divide each  cookie into two equal halves. Let cool completely.
Meanwhile, place 1/2 cup vanilla icing in a bowl and add blue food coloring to create the desired shade. Place 1/4 cup vanilla icing in a bowl and add orange food coloring to create the desired shade.  Spread blue icing over 1/2 of the cookies. Swirl a small amount of white frosting on top of the blue to create a cloud.
On the other half of the cookies use the glitter icings to make a curved line on the cookies. First make a line of purple, immediately below it make a line of green and immediately below the green add a line of red. Spread a curved line of orange frosting below the red. Fill in the remaining space on the cookie with blue icing. Place this half of cookie on the edge of the blue frosted cookie.
To make pots of gold: spread a small amount of vanilla icing on top of a Rolo Candy. Add 4 pieces of the chopped Mike and Ike candies’ to each “pot.” Place the Rolo in the white cloud on the bottom of each cookie.
