Spinach and Bacon Breakfast Bake Recipe Gluten Free

Summer is a time of resting and relaxation, supposedly. I am finding this summer, when I had plans to accomplish lots of chores I have been neglecting, is shaping up to be busier than the school year. Lately my family has been consisting on “quickie” meals, and if I can talk a male member of the family into it, grilling. “Here’s a package of hamburger, don’t you want to grill?” I have to find something the kids will like, while sneaking in some veggies.  I have a winner in my Spinach and Bacon Breakfast bake. It’s not just for breakfast! Plus, the kids would much rather have a simple one dish meal than what we call, “Hallelujah Nights,” when they have to eat leftovers and be thankful they had them!

Here’s how to make it:

I used several of the Good Cook knives in my recipe and can’t believe the difference a Good Knife can make! Chopping the veggies was much easier than normal when I am hacking at them with my old knives. I used the following knives in this dish to test them out: Santoku Knife, 5 inch, Cooks Knife, 5 1/2 inch, Chef’s Knife, 6 inch, the comfort grip handle paring knife, the 4 1/2 inch utility knife and the nonstick Santoku knife. (Warning: These knives are very sharp. I know from experience.)

A gluten free version of a classic quiche. Add whatever veggies you like with the spinach: mushrooms, peppers, etc.
Ingredients
  • 6 large eggs, beaten
  • 2 cups (16 ounces) heavy cream
  • Salt and pepper to taste (1/2 teaspoon approximately)
  • 2 cups chopped fresh baby spinach, packed
  • 1 pound bacon, cooked and crumbled
  • 1 1/2 cups shredded cheese of your choice, (note: stronger flavored cheeses work better)
  • 1 medium onion, chopped (use 1/2 cup to 1 cup depending on taste)
  • 1 medium tomato, chopped (use 1/2 cup to 1 cup, depending on taste)
Instructions
  1. Chop spinach, onion and tomato. Place in a 9″ by 9″ casserole dish. Top with crumbled bacon. Mix beaten eggs, salt and pepper and cream together in a medium sized bowl. Pour over spinach mixture. Cover the pan with foil and bake in a 350 degree oven for 30-40 minutes or until knife inserted in the center comes out clean.

I have always prided myself on having a well stocked kitchen.  Need to make a casserole? I’ve got dishes! Need to make mini loaves of bread? I’ve got pans! What I have never had a good stock of was knives. I’m not sure why I didn’t have knives. I was constantly complaining about not having enough.  As the kids got older and wanted to help in the kitchen, they would yell, “Where are the knives? Do we have any clean knives?” The answer was usually, “No.” Imagine having to pass two knives around the kitchen when you are making a  Thanksgiving Dinner for 20 and you can begin to get a picture of my dilemma.  When I had a chance to participate in the Good Cook Build Your Kitchen Drawer Event, guess what I stocked up on?
