Easy Smores Parfait Recipe

S’mores have a reputation of being a “fall” food-best enjoyed around the campfire. But, let’s face it. Those little bits of drippy marshmallow chocolate goodness are good any time of year. Usually, in the fall and winter, we enjoy sitting around our fire pit toasting marshmallows for s’mores. Now that summer’s coming up -with its 100 degree days of heat and humidity- a fire loses its appeal. That’s when I pull out the ingredients for this Easy Smores Parfait Recipe.

Easy Smores Parfait Recipe

I’ve had a love for this dessert since I was a kid. My first experience with Smores was when I was sitting around the fire at Girl Scout Camp. I didn’t enjoy camp (out in the woods with possible ax murderers? No, thanks.) but I sure enjoyed the smores. It was the one thing -along with an endless supply of flashlight batteries- that made it bearable for me. Now that I’m older, this Easy Smores Parfait recipe satisfies my sweet tooth without (hopefully) the possibility of ax-murderers, camp, or freezing temperatures.

These parfaits have 5 ingredients and a short prep time, making them a good dessert to prepare when you are in a rush or have surprise company. They’re good served either warm or chilled, depending on the time of year you prepare them. Because, honestly, who doesn’t want Smores year-round?

Serve these in individual glasses or double or triple the recipe and serve it in a large trifle bowl. You’ll want to bookmark or print this recipe to have on hand whenever a smores craving hits!

Cooking Tips:

  • Don’t use instant pudding in the recipe. The pudding has to be warm to melt the marshmallows.
  • Be sure to layer the marshmallows between the pudding while it is still hot.
  • Want to make this a lighter version? Substitute fat-free and sugar-free ingredients in the recipe. Use skim milk, low-fat pudding, low-fat whipped topping, and low-fat graham crackers. It won’t be as rich as the original version, but will still be tasty.
  • Need to make this gluten-free? Substitute gluten-free graham crackers.
  • Substitute grated milk chocolate for the Hershey bar if desired.
  • Plan ahead- this recipe needs 10 minutes of chilling time before serving if serving cold. If serving warm, the parfait is ready as soon as prepared.

Here’s What You Need to Make It:

  • Cook and Serve Chocolate Pudding
  • Milk
  • Graham Crackers
  • mini marshmallows
  • These last two ingredients are optional but really add to the taste
  • whipped topping (like Rediwhip)
  • chocolate- I like to use Hershey’s kisses, grated chocolate from a Hershey bar, or shaved semi-sweet chocolate

How to Make Pudding in the Microwave:

Speed up the cooking time by preparing the pudding in the microwave. You’ll need a microwave safe bowl, pudding mix, and milk.

  • Add the milk and the pudding mix to a microwave-safe bowl. Stir until the mixture is blended.
  • Place the pudding mixture into the microwave. Microwave on high for two minutes. Remove from the microwave and stir.
  • Return the bowl to the microwave and heat on high for an additional two minutes. Remove from the microwave and stir well. The mixture should be beginning to thicken.
  • Return the bowl to the microwave for a final two minutes, heating on high. Remove from the microwave, stir until smooth, and use the pudding as directed in the recipe below.

An easy five-ingredient dessert that can be made in 30 minutes or less.
Ingredients
 

Ingredients

  • 1 (3 ounces) box of Cook N Serve Chocolate pudding.

  • 2 cups milk

  • 4 graham crackers, crushed

  • 1 cup mini marshmallows

  • Whipped topping (like Rediwhip)

  • 4 Hershey’s kisses or squares from a Hershey bar or your favorite chocolate bar, optional

Directions

  • Mix pudding and milk in a microwave-safe bowl. Cook for six minutes, stirring after every two minutes.
  • Layer 1 tablespoon pudding, followed by one crushed graham cracker into each of four parfait glasses (or a small juice glasses).
  • Add another tablespoon pudding and top with 1/4 cup mini marshmallows. Top the marshmallows with an additional tablespoon of pudding. Important—do this while the pudding is hot so the marshmallows will melt.
  • Immediately before serving, top the parfait with a dollop of whipped topping.
    Add a Hershey’s kiss for garnish, if desired.
