Spring is finally in the air, reminding me of campouts, cookouts and long lazy days spent on the river or the beach.  Those days don’t happen often, but I can dream, can’t I? Nothing reminds me of these days like ooey, gooey Smores, dripping with chocolate and marshmallows.  I can almost start drooling just thinking about them. My daughter had been moping around the house, bemoaning the fact she could no longer have her favorite treat, Smores bars, since she has Celiac.   This all changed after Saturday when I invited her to tag along with me to the Gluten & Allergen Free Wellness Event in Nashville.   While we were chatting with the rep from Enjoy Life foods, we discussed how difficult it is to make gluten free baked goods with the same taste and texture as regular treats.  She told us she often used Vanilla Honey Graham cookies for crusts and offered to let us take a box home to experiment with.  Naturally, my daughter couldn’t grab those cookies fast enough and asked me to make Smores bars as soon as we got home.   (If you are not gluten free, you can substitute regular graham crackers if you like. )

Ingredients
After I whipped up a batch, I had to agree. These are amazing! I cannot confirm or deny eating several of these for a snack because they were so hard to resist.  I didn’t get to eat as many as I would have liked because everyone else felt the same. They disappeared quickly. Maybe I shouldn’t have shared!  Here’s what you will need to make them:

I have included the ingredients for a gluten free version and a regular version.
Ingredients
  • Gluten free version:
  • 1 package (6.3 ounces) Crunchy Honey Graham crackers, crushed
  • 3 tablespoons butter, melted
  • 2 cups mini marshmallows
  • 3 milk chocolate candy bars (1.55 ounces each), chopped
  • Regular version:
  • 2 cups graham crackers, crushed
  • 3 tablespoons butter, melted
  • 2 tablespoons sugar
  • 2 cups mini marshmallows
  • 3 milk chocolate candy bars (1.55 ounces each), chopped
Instructions
  1. Preheat oven to 350 degrees. Mix crushed cookies with butter. Spread across the bottom of a 8″ by 8″ baking pan. Bake 10 minutes, remove from oven. Place marshmallows on top of crust mixture. Add chocolate to the top of marshmallows. Return to oven for 5 to 10 minutes or until marshmallows and chocolate are melted. Remove from oven and use a knife to make swirled patterns in the chocolate and marshmallow mixture. Allow to cool before cutting. I placed it in the freezer for 20 minutes to make it firm.
  2. Regular version:
  3. Mix graham crackers, sugar and butter together, then follow the directions for gluten free version.

Use a knife to swirl the chocolate and marshmallow mixture together.

The texture of the these smores bars are similar to the regular version, but are a touch more crumbly.  Be sure to store them in the fridge before eating to allow them to become firm.
