Share Coca-Cola Chocolate Cupcakes with Caramel Frosting

Living in Georgia, the birthplace of Coca Cola, we share a coke at family get togethers, pot luck meals and entertaining with friends.  While shopping at Walmart recently, I ran across a demo that featured people’s name on coke bottles.  This looked like the perfect way to share coca cola in a personal way.  I searched the coke bottle name list and found a coca cola bottle with the name of my new son-in-law. While I was searching for other family members, my daughter exclaimed, “Look, Mom! I found a Brittany!” We purchased as many family member names as we could find and added bottles of coca cola share a coke with family for other members.   I wanted to make our meal extra special so I decided to make Chocolate Coke Cupcakes with Caramel frosting for dessert.

My daughter, who has celiac and must eat gluten free, complained she never got cupcakes anymore.  After looking at several recipes for gluten free cupcakes, and deciding I didn’t want to have to go to the store for several different types of gluten free flours, I pulled out a box of gluten free chocolate cake mix and made the cheater’s version.  Once I had dressed up these cupcakes with extra ingredients, no one could tell they were gluten free.  I think it is the Caramel frosting with a secret ingredient that puts them over the top.

Here’s what you need to make them:

  • 1 box Gluten Free Chocolate Cake Mix
  • 3 eggs
  • 1 cup (8 ounces) sour cream
  • 1 ½ cups (12 ounces) mini marshmallows
  • 1 stick butter, softened
  • ½ cup (4 ounces) Coca Cola

You’ll need the following ingredients for the Caramel frosting:

  • 30 caramels, unwrapped
  • ½ cup (4 ounces) heavy cream
  • 2 cups (16 ounces) powdered sugar
  • 1 stick butter, softened
  • ¼ cup (2 ounces) Coca-Cola (our “secret” ingredient!)

Coke Cupcakes

The cake is easy to make.  Pour the cake mix into a medium bowl.  Add the butter, eggs and sour cream. Mix well. Add the Coca-Cola and marshmallows. Stir until blended. Fill cupcake liners ½ full and bake in a 350 degree oven for 20-25 minutes. Allow to cool completely.

While cupcakes are baking, make the frosting.  Place the caramels and cream in a saucepan over low heat.  Stir caramels until melted. Add the powdered sugar and butter to a medium bowl and pour in caramel mixture.  Stir until well blended. Add Coca Cola and stir again. Frost cupcakes as desired.

  11. Very Interesting – I can’t say I’ve ever seen pop used in baking recipes! I’ve seen it in things that go in the crock-pot – but nothing more! Interesting. Going to have to give this a try 🙂

I saw the names on the bottle by accident and it’s been fun looking for our names on them; I hope that sticks around a while 🙂 I also really, really enjoy your recipe because we do a lot of GF food here, too, because my little one has an intolerance for gluten. He can eat it, but it’s best if he doesn’t (we supplement with enzymes and other things when he does eat a lot of it). Its really true, too–you can very easily give people GF stuff and they have no clue. I had friends over and did a whole GF spaghetti dinner and no one knew–they even asked what brand the sauce was 🙂 I’m pinning this and will probably print it as well. Love your photos and story! We use Coca~Cola (soda) in several recipes around here (cakes, sauces etc).

  21. I would love cupcakes with caramel icing!!! We drink Coke sometimes here. I did get to see the Share a Coke set up which was kinda neat. They gave each of us a free can. My son has been wanting a can with his name on it. His name is kinda common so I’m shocked we haven’t found one yet.

  52. I’m loving the Coke name on cans. So cute. I know they won’t have my name since its spelled differently. The other day a friend passed away. The next day a friend had gone shopping. The one Coke can that was sitting on the shelf with the name out was the name of the one who passed away. So sad, but it was also taken as a sign. The photo was posted on FB and everyone loved it. Thats how I first saw these new Coke cans. It would be fun to get one for family members to save.

  56. I do like Coco Cola… the names they are starting to do is very cute! Good job w the cupcakes.. Are they soft and moist? I tend to have a hard time eating GF breads due to no moistness.

    • Yes, they are moist thanks to the addition of the sour cream. Adding things to a boxed gluten free mix makes them much better!
