Rabbit’s Carrot Cupcakes recipe (Winnie the Pooh themed fun)

Spring is in the air! I hope. Β After a long winter filled with unusual weather patterns we are ready to see signs of spring. What better way to celebrate than by watching the new Winnie the Pooh Blu-ray Springtime with Roo (released on March 11th) while enjoying Rabbit’s Carrot Cupcakes? Β Want to know how to make them for your gang?

Delicious Carrot Cupcakes with a cream cheese frosting. Simple to make carrots can be added to the top for decoration.
Ingredients
  • For Cake:
  • 1 cups (8 ounces) EACH all purpose flour and granulated sugar
  • 2 teaspoons EACH baking soda and baking powder
  • 2 teaspoons EACH vanilla and ground cinnamon
  • 1/2 teaspoon salt
  • 1 1/2 cups (12 ounces) grated carrots
  • 1/2 cup (4 ounces) chopped walnuts
  • 2/3 cup (6 ounces) vegetable oil
  • 2 eggs
  • For Frosting:
  • 1/4 cup (2 ounces) butter, at room temperature
  • 1/2 cup (4 ounces) cream cheese, at room temperature
  • 2 cups (16 ounces) confectioners sugar
  • 1 teaspoon vanilla
  • For Carrots
  • 1/2 cup (4 ounces) fondant
  • orange food coloring
  • 4 green gummy worms, cut into thirds
  • Easier way to make carrots:
  • 12 orange Starburst candies
  • 12 green Starburst candies
Instructions
  1. For cake:
  2. Preheat oven to 350. Place cupcake liners in a 12 cup muffin pan. In a large bowl, beat the eggs, oil, sugar and vanilla. Mix in flour, baking soda, baking powder, salt and cinnamon. Stir in carrots and then pecans. Spoon into muffin cups, filling each cup half full. Bake 25 or 30 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool completely before frosting.
  3. For Frosting:
  4. Combine the butter, cream cheese, confectioners’ sugar and vanilla in a small bowl. Mix until combined. Pipe onto cooled cupcakes.
  5. For carrots:
  6. Place fondant in a small bowl and add orange food coloring if desired. Knead until food coloring is well mixed into the carrots. Pinch off small amount (about a tablespoon) of fondant and roll into carrot shape. Using a knife, make grooves in the fondant to resemble grooves in carrot. Add the green gummy worm segment to the top of the carrot. Position on the cupcake.
  7. Easy Way to make carrots:
  8. Unwrap Starburst candies. On a piece of waxed paper, use a glass to roll over each piece of Starburst until thin. Shape orange pieces into carrot shape. Add green pieces for leaves. Arrange on top of cupcake.

  64. This is very similar to my carrot cake. My youngest loves when I make the carrot on the top. I never thought that these would be perfect to make for the Easter Bunny!
