Easy Peanut Butter “Ice Cream” Brownie Bites Recipe

Snacks foods are a big deal at our house. When we are out of convenience snacks someone is quick to tell me, “We don’t have anything to eat.” I try to make healthy snack recipes when I have a chance, so I am always on the lookout for new snack ideas. Because the heat index is still hovering around 100 degrees at our house, cold foods are the food of choice right now. Ice cream sandwiches are a favorite, but I wanted something a little healthier. While grabbing some groceries at Publix, I saw the new Weight Watcher’s Brownie Bliss snack cakes and an idea was born. Why not make healthier Brownie “ice cream sandwich bites.” These small morsels are filled with a creamy peanut butter filling and frozen into bite size goodies. They’re so good the entire family will like them.

How to Make Brownie “Ice Cream Sandwich Bites”

Don’t you love snack recipes with only a few ingredients? These only use three; reduced fat peanut butter, low fat or fat free frozen whipped topping, and Weight Watcher’s Brownie Bliss bites. (These come in four flavors; peanut butter, salted caramel, mint chocolate and triple chocolate. My favorite for this recipe is the Peanut Butter, but substitute your favorite or use more than one.)

Mix the peanut butter and whipped topping together until blended. Tip: It helps to place the whipped topping in the microwave for about five seconds to get it to the correct consistency for stirring.

Spread one teaspoon of peanut butter filling onto one Brownie Bliss Bar. Place another Brownie Bliss Bar on top of the filling. Press the top Brownie Bliss bar gently and remove any excess filling. Place in the freezer for 30 minutes to harden.

Once the Brownie Ice Cream Sandwich bites are frozen, store them in an airtight container in the freezer. You’ll have “ice cream sandwiches” on hand whenever the snacking urge hits!

Ingredients
  • Weight Watchers Brownie Bliss Bites in flavor of your choice
  • 1/4 cup peanut butter
  • 1/2 cup frozen whipped topping
Instructions
  1. Mix peanut butter and frozen whipped topping together until blended. Spread 1 teaspoon on bottom of a Brownie Bliss bar. Gently press another Brownie Bliss bar on top. Wipe away any excess peanut butter mixture.
