Easy Peach Muffins Recipe

I’ve been making lots of tasty pies using Equal Sucralose lately. Having decided we might need to cut down on sweets, I attempted to find other recipes that use Equal Sucralose,  I found it was versatile. Pancakes, bread, and muffins could be made substituting Equal for sugar. When I found a sugar free blueberry muffin recipe, I tweaked it a little to my tastes. I had peach muffins at a restaurant in Atlanta and decided this would be my opportunity to try these at home.

Ingredients
2 cups peaches, fresh or frozen, diced (if using frozen, thaw before beginning)
1 1/2 cups all purpose flour
2 1/2 teaspoons baking powder
2/3 cup Equal Sucralose +4 Tablespoons
1 egg
1/4 cup applesauce
1/2 cup skim milk

Combine the egg, apple sauce and milk. Stir until blended.  Coat the diced peaches with the four teaspoons of Equal and set aside.

Combine the flour, baking powder and Equal into a bowl. Stir gently to mix.

Add the flour mixture into the egg mixture and stir until mixed. Add the peaches, stir, and bake in a 350 degree oven until done. (About 20 minutes)

Don’t they look pretty? They can be frozen and reheated for a breakfast on the go.
