Molten Chocolate Lava Cake Recipe

Whoever said the way to a man’s (or woman, we’re equal opportunity here) heart is through their stomach must have had some of this delicious molten chocolate lava cake. After all, who doesn’t enjoy a yummy piece of cake? This is the perfect Valentine’s Day dessert because it is easy to make. It can also be made into a gluten free recipe with one simple change.  Now that I’ve got your attention, let’s get cooking.

Molten Chocolate Lava Cake Recipe

Molten Chocolate Lava Cake Recipe: 

Ingredients:
2 large eggs  PLUS 1 egg yolk
6 tablespoons  melted butter
3 tablespoons sugar
1 cup dark chocolate chips (or milk chocolate chips or semi-sweet chocolate chips.) Use your favorite!
3 tablespoons  self rising flour
1 tablespoon cocoa powder
1/8 teaspoon salt

Tip: To change this to a gluten free recipe, simply swap the self rising flour for Gluten Free Self Rising Flour.

Directions:
1. Preheat oven to 450 degrees F.  Spray a muffin pan with cooking spray (or can use oven proof mugs.)
2. Melt chocolate chips and butter in microwave for 30 seconds.  Stir  until the mixture is completely melted.
3. Add the cocoa powder and salt to the chocolate mixture. Allow  the mixture to cool for 5 minutes.
4.Beat the eggs and sugar together until well blended.
5. Add egg mixture to chocolate mixture. Stir until completely mixed. Add flour.
6. Pour the batter into muffin tins (be sure to only fill about 1/2 to 3/4 full so mixture has room to rise.) Place the muffin pan in the freezer for 5 minutes.
7. Bake for 10 to 15 minutes until the sides are set. Let cool before serving.
