Growing up in a home where we did not have sweets unless it was a rare occasion, like holidays, birthdays or big family dinners, it was surprising that my mom made the most amazing lemon ice box pies.  I could hardly wait for my mom to pull one of these out of the freezer. I could have spent hours savoring my piece, except I wanted to make sure no one (like my dad) ate the pie before I did.   My Mother-in-law also had a lemon ice box pie recipe, slightly adapted from my mom’s, that she made- and still makes- every holiday meal because it is the most requested treat of the grandchildren.  Because my daughter liked this pie so much, I wanted to make a gluten free version she could enjoy, while making it low fat so all the diabetic members of the family could enjoy it too.  I got busy in the kitchen and began experimenting. The first one I made, sad to say, was not one of my better adaptions.  “Well, this isn’t the best thing I’ve ever tasted,” my dad told me.  I continued to experiment and came up with this version,  which all my family members agreed was “just as good as Grandmother’s.”    Because the filling is not thick enough to serve without a pie crust to hold it together, I served it in parfait cups.
If you want to make the recipe the traditional Southern way,  don’t use lowfat ingredients, substitute sugar for the artificial sweetener, and serve it in a graham cracker pie crust.

A luscious adaption of a classic Southern dessert. You won’t know its lower calorie and gluten free!
Ingredients
  • 2 packages (8 ounces each) fat free cream cheese
  • 1 container (12 ounce) frozen whipped topping
  • 3 single serve packages sugar free lemonade mix (I used Crystal Light)
  • 2 tablespoons lemon juice
  • 1 teaspoon vanilla
  • 1/2 cup artificial sweetener
Instructions
  1. Combine cream cheese, lemonade mix, lemon juice, vanilla and artificial sweetener in a large mixing bowl. Beat with mixer until well blended. Add thawed whipped topping mix and mix well. Place the mixture in an eight inch pie pan and place in the freezer for four hours. Serve well chilled.

  67. I’ve found that rather than go low-fat, just cutting the portion in half and eating is slow is much more satisfying and usually the same (or less) calories than the low-fat version!

    • we don’t use the artificial sweetner – but i can still make this with regular lemons and just cut the sugar. my kids wouoldn’t notice becuase i go light on the sugar regularly!
