Homemade Blueberry Kefir Lemon Ice Cream

This summer, thanks to the patio redo we are working on, I’ve been focused on entertaining. I can invite people over in the evenings and we can sit outside in the shade! That’s a huge deal when it is 100 degrees outside and the humidity only seems to be rising. Reminiscing about the lazy summer days spent on my Grandmother’s farm with my huge extended family, I remembered my absolute favorite treat—homemade ice cream. We would gather on the front porch and takes turns cranking the handle, mouths watering, for a taste of cold creamy goodness. When we invited friends over for a cookout, I decided, “We need homemade ice cream!” I had been shopping at Winn Dixie, thinking of which flavor of ice cream I wanted when I spotted Lifeway Kefir in the dairy section. Seeing it contained 12 live and active Probiotics cultures, was high in calcium, gluten free, 99% lactose free and had no preservatives cinched the deal. It was perfect for an allergy friendly ice cream!

I wasn’t sure which variety of Kefir I wanted, raspberry, blueberry or plain, when my daughter told me, “Mom, I want to try Blueberry Lemon ice cream. I’ve heard it’s delicious.” I was skeptical, but I picked up a bottle of Lifeway Foods Blueberry Kefir and brought it home. I served it to our guests, with strict instructions to tell me if they did not like it, and it turned out to be a hit! Our next door neighbor liked it so much he brought me a batch of freshly picked blueberries to add to the ice cream the next time I wanted to make the recipe.

Here’s what you need to make it:
1 bottle (32 ounces) Lifeway Blueberry Kefir
1 container ( ounces) frozen lemonade concentrate
1 tablespoon grated lemon peel
2 cups (16 ounces) sugar
Delicious recipe for Blueberry Lemonade Ice Cream only takes a few ingredients. It's naturally gluten free and tastes so good.

Pour the sugar, blueberry Kefir and lemonade concentrate into a bowl. Mix until well blended. Add lemon peel and stir. Pour into an ice cream freezer and freeze according to the manufacturer’s directions.

We had a great time making our ice cream, especially since our friend volunteered to do all the churning. I can’t wait to make another batch. This time I’m thinking raspberry cheesecake!

  16. I’ve made homemade icecream but in a can or a plastic bag, not with a churn thing like you have. I’ve never tried Kefir but I wish I had known it was 99% lactose free when I was younger. I’m lactose intollerant but tolerate it pretty well now. When I was younger, it was really bad.
