Gluten Free White Chocolate Toffee Cake recipe

The Christmas season is difficult for my daughter. Since she was diagnosed with Celiac disease two years ago, she hasn’t been able to partake of some of her favorite dishes.  Substituting gluten free ingredients does not always work in conventional recipes because the texture is different.  She had recently been to Nashville and experienced “some amazing gluten free cakes.” I promised to try to replicate a cake for her and came up with this Gluten Free White Chocolate Toffee Cake.  I used SPLENDA® Granulated No Calorie Sweetener to reduce the sugar content. While these cakes still turned out a little on the dense side, they tasted delicious. I used a mini bundt pan to make 12 small cakes. These can be frozen and thawed for a sweet treat.

Here’s what you need to make them:

Begin by toasting the pecans.  In a large bowl, mix the eggs, gluten free baking mix, almond extract, butter and SPLENDA® No Calorie Granulated Sweetener until well blended. Add the white chocolate chips, toffee bits and toasted pecans.

Place the mixture into 12 mini bundt pans and bake.  Allow to cool and drizzle with white chocolate and toffee bits.

Gluten Free White Chocolate Toffee Cake recipe

Ingredients
  • 2 cups gluten free baking mix
  • 1 cup Splenda granulated sweetener
  • 2 eggs
  • 1 teaspoon almond extract
  • 1 cup white chocolate chips
  • 3/4 cup toffee bits
  • 3/4 cup milk
  • 3 tablespoons butter
  • 1/2 cup chopped pecans
  • Glaze:
  • 1/2 cup white chocolate chips
  • 2 tablespoons cream
  • 1/4 cup toffee chips
Instructions
  1. In skillet, melt one tablespoon butter. Toast pecans for five minutes, stirring constantly. Mix baking mix, eggs, almond extract, Splenda, milk and butter in large bowl. Stir in pecans, white chocolate chips, and toffee bits. Pour mixture into 12 small bundt cups and bake at 350 degrees for 15 to 20 minutes or until a knife inserted into the cake comes out clean. Allow to cool.
  2. Melt white chocolate chips and cream together in a microwave safe bowl for 45 seconds, Stir, Return to microwave 15 seconds and stir. If not melted, microwave for another 15 seconds. Drizzle the white chocolate mixture over the cakes and top with toffee.
