Easy Mocktail Lemon Drop Recipe

Spring is here and that means sitting out on my patio in the evening.  And what better way to enjoy a spring evening than sipping a drink and dreaming of tropical vacations? The kids had been asking me to make them something to drink so I checked the fridge for ingredients and came up with this Easy Mocktail Lemon Drop recipe. It only takes two ingredients and tastes delicious. Plus, adding a ring of colored sugar around the rim gives it a festive touch and makes it a perfect recipe to serve to guests.  Did I mention it is a gluten free mocktail so everyone can enjoy it?

To make the recipe I used a 2 liter bottle of club soda and one 12 ounce container of frozen lemonade concentrate. You can use regular or pink lemonade to vary the colors. If you want a lower calorie version, substitute the frozen lemonade concentrate for one family sized package of pink lemonade drink mix (like Crystal Light.) The version made with the lemonade concentrate will be tart, while the version with the drink mix will be sweeter.

To make the sugared rims on the glasses, dip the rims of a glass evenly in either corn syrup or water. Corn syrup helps the mixture stick to the glass better, but water works and has no calories or preservatives.  Spread the sugar evenly over a flat surface and dip the glass straight down into the sugar. You might have to dip the glass twice to make sure it is covered evenly. Shake off any excess sugar.

Sour Lemon Drop Mocktail
Ingredients
  • 1 1 liter bottle club soda
  • 1 (12 ounce) container of frozen lemonade concentrate (regular or pink) OR 1 family sized container sugar free pink lemonade drink mix (like Crystal light)
Instructions
  1. Mix the lemonade concentrate (or the lemonade drink mix) with the club soda and stir until mixed. Serve immediately or keep in fridge until ready to serve.
