Christmas Tree Cookie Ball Pops Recipe

The holiday spirit is in the air.  Soon the kids will be out of school for Christmas break and relatives will be arriving to celebrate.  My family, including those extended family members, expect to be greeted with homemade candy treats when they visit.  I have no problem with this, especially since I get to sample the goods to make sure they “meet expectations.”  This year we found a recipe for Christmas Tree Cookie Ball Pops. They looked delicious and didn’t take a lot of ingredients.  It also includes OREO Cookies. Come on, who doesn’t love OREO’s? The recipe is versatile too. I can use different flavors for different seasons.  Thanks to Lunchbox for sponsoring this yummy recipe post.

To begin you’ll need Cool Mint  Creme OREOS, Philadelphia Cream Cheese and BAKER’s White Chocolate.  I soften my cream cheese in the microwave for 20 seconds before I begin.  I also process the OREOS in the blender for about five seconds to make sure they are finely crushed.

Mix the cream cheese and OREOS together until blended.  This usually takes about two minutes of mixing.  The mixture should look like this when blended:

Shape the mixture into balls and place on waxed or parchment paper. Melt  white chocolate in microwave for 45 seconds.  Stir, then return to microwave for 30 seconds. Stir again until melted.  Add food coloring and mix until blended.

Dip a lollipop stick into the melted chocolate and then insert it into the cookie pop. Continue doing this until all cookies have lollipop sticks.  Freeze for ten to fifteen minutes until chocolate balls are completely cool.  You’ll need them to be cold before dipping the ball into the chocolate.  Dip the chocolate balls into the remaining chocolate until completely covered. Allow to dry on a baking sheet.

Decorate as desired. You can easily make a Christmas Tree with decorator icing and red hot candies.  I used white sugar to resemble snowballs. HELPFUL HINT: Do not use “cookie gel icing” it is too runny, leaving the Christmas trees looking more like squiggles. Not that this happened to me and I had to cover it up with white sugar.
