Chocolate Peanut Butter Parfait Recipe

I’ve been on a parfait kick recently. Parfaits can be simple or elegant and can be adapted for diabetic family members. This parfait combines a luscious peanut butter mousse with creamy chocolate pudding. It’s so rich that only a small amount will satisfy almost any sweet tooth.

This is a quick and easy dessert that can be adapted for diabetics. The peanut butter and chocolate combination is mouthwatering.
Ingredients
  • 1 package (3 ounces) cook and serve Chocolate pudding
  • 2 cups milk
  • 3/4 cup peanut butter
  • 1 Tablespoon butter, melted
  • 2 Tablespoons powdered sugar
  • 6 ounces whipped topping (like Cool Whip)
  • Whipped cream and Reeses pieces for garnish, optional
Instructions
  1. Mix milk and chocolate pudding until no lumps remain. Cook, in a microwave safe dish, six minutes, stirring after every two minutes. Meanwhile combine peanut butter, butter and powdered sugar and stir until smooth. Add the whipped topping. Stir.
  2. Spoon 2 Tablespoon pudding into the bottom of a parfait dish or small glass. Top with 2 Tablespoons peanut butter mousse. Continue to alternate layers, ending with chocolate. Chill until ready to serve.
  3. Just before serving, add whipped topping and Reeses Pieces for garnish, if desired.
