Chocolate Peanut Butter "Frozen Yogurt" Dairy Free, Gluten Free

Having a special diet can be hard. It means missing out on favorite treats and meals with friends. My daughter was recently put on an “elimination diet” to find out what foods she is allergic too and the list keeps growing.  We’ve gotten strawberries, shellfish, any foods with gluten, and tomatoes.  As the list of things she can eat grows smaller, I’ve been trying to find recipes that she could eat and enjoy.  This recipe for Chocolate Peanut Butter “frozen yogurt” is dairy free and gluten free and the kids enjoyed it so score one for mom!  Did I mention that it is so simple, taking about five minutes to prepare and doesn’t require an ice cream freezer?

While the recipe was supposed to have an ice cream type consistency, ours had more of a soft serve consistency.  We tried the recipe several times and I think it works better with thicker, crunchy peanut butter because it gives it more flavor. If you aren’t concerned about sugar, use one of the flavored type peanut butters like chocolate and raspberry swirl. Yum!  Also, be sure to peel the bananas before you freeze them because nonpeeled bananas=big mess.

A gluten free, dairy free, low fat version of frozen yogurt.
Ingredients
  • 2 bananas, frozen and broken into chunks
  • 3/4 cup lowfat or all natural peanut butter
  • 4 droppers of NuNaturals vanilla stevia
  • 2 tablespoons unsweetened cocoa powder
Instructions
  1. Add frozen bananas to blender and puree until smooth. Add peanut butter, NuNaturals, and unsweetened cocoa powder. Process until smooth. Pour into a bowl and place in freezer for two hours.

If you haven’t heard of NuNaturals, these products are developed to have no bitter taste like some sweeteners, are gluten free, have no msg and do not cause gas or digestive problems.  The sweeteners are concentrated so only a small amount has to be used and the flavored varieties contain plant extracts.
