Chocolate Dipped Carrot Strawberries For Easter

Every Easter my children encourage me to try one (or more!) new recipes for Easter. This year my son brought me a magazine and said, “Can you make these Strawberries that are dipped in chocolate to look like carrots?” Since the price of strawberries has dropped dramatically in the past few weeks and the recipe required only two ingredients, this seemed like an easy, cost efficient recipe to prepare.  I finally made it to the store, purchased my ingredients and finished the great carrot strawberry project.  The result, as determined by my son, was, “These taste really good, Mom, but they don’t look as good as the ones in the magazine.”  They didn’t, but I thought they still turned out well. I blame my son for being too picky.  I also remembered a couple of hints so that yours can turn out to be “magazine quality.”

Here’s all you need to make them; one pound strawberries and one bag (around 12 ounces) of Orange Candy melts.  I used the Wilton brand, which is available at any craft store or larger big box retailer.  Before you begin wash the strawberries and dry them thoroughly.  If they berries aren’t thoroughly dried, water will get into the candy coating and create lumps. No one wants lumpy “carrots.”  If you want an incredibly smooth finish for your berries, add 2 teaspoons canola oil to your candy melts and stir until smooth.

Place the candy melts in a double boiler and melt over medium heat. Once melted, turn the heat down to low. (It’s important to use a double boiler to keep the candy melts from hardening.) Dip the strawberry into the candy melts and turn to coat. Allow excess chocolate to drip off the strawberry and then place on waxed paper to harden. I used a spatula to make to smooth the chocolate and create a few raised ridges.  I didn’t coat all the strawberry, but to make it look more like a carrot, I suggest coating the entire berry.
