Banana White Chocolate Chip Cookies Recipe

Sometimes you need a batch of cookies. But maybe you don’t have time to spend hours in the kitchen rolling dough and allowing dough to chill. I’ve got you covered with this 6 ingredient Banana White Chocolate Chip Cookie Recipe.  You can whip it up in minutes and it makes a small batch of one dozen cookies.

Banana White Chocolate Chip Cookie Recipe

I’m a huge fan of recipes that use common pantry and refrigerator ingredients. I don’t like making special trips to the store for “just one ingredient.” Probably because I return with several sacks full of groceries and sometimes forget the one item I went for, but I digress. One thing I’m not a fan of is expensive, hard-to-find ingredients. Sure, I could have them shipped to my house, but then I would have to wait to make the recipe.  I make those recipes for special occasions when I can plan in advance. For everyday cooking, simplicity wins.

Cooking Tips:

*This recipe can be made gluten-free by using gluten-free oats. Since not all oats are gluten-free, be sure to check the ingredient list before purchasing.  Bob’s Red Mill is a brand I use often as it is usually available in grocery stores nationwide. Quaker Oats also makes a gluten-free version but it is harder to find.
*You can adjust the salt and sugar to your taste or leave them out completely.
*You can substitute vanilla extract for the almond extract.
*Be sure to coat the baking sheet with nonstick cooking spray before cooking to keep the cookies from sticking.
*This is a good way to use extra ripe bananas. The riper the bananas are, the more naturally sweet the cookies will be.
*You can use other chips of your choice in this recipe. Any of the following chips will work: peanut butter, milk chocolate, semi-sweet chocolate, dark chocolate, or butterscotch.
*You can substitute medium bananas if that’s what you have on hand. Use 3 bananas instead of two.

How to Make Your Own Oat Flour

Add one cup of instant or quick cooking oats to a blender or food processor. Pulse for 10 to 15 seconds or until the mixture is thoroughly ground.  This is much cheaper than purchasing ground oat flour!

Cookie Baking Tips:

Use a light-colored cookie sheet when baking. The light reflects heat, allowing the cookies to bake evenly.  Dark-colored cookie sheets absorb heat, resulting in the bottom cooking faster and possibly burning before the top of the cookie is done.

Cookies burnt on the bottom? Scrap off the bottom using a cheese grater. You should be able to salvage the rest of the cookie without retaining a burnt taste.

A simple no-fuss recipe that can be made gluten-free.

Ingredients

  • 1 cup quick cooking or instant oats, pulsed in the blender to make flour

  • 2 large bananas, peeled and mashed

  • 1/4 teaspoon salt

  • 2 teaspoons sugar

  • 1 teaspoon almond extract

  • 3/4 cup white chocolate chips

Directions

  • Preheat oven to 350 degrees. Spray a baking sheet with nonstick cooking spray.
  • In a medium bowl, mix the oats, salt, and sugar. Stir in the bananas until the mixture is blended.
  • Stir in the almond extract. Add the white chocolate chips and mix well.
  • Shape into 12 1-inch balls. Place on the baking sheet and flatten with a fork.
  • Bake 8-12 minutes or until cookie is firm.
