Amaretto mousse truffles

Each year I make an assortment of candies to give to friends and relatives. If I forget to make them I am constantly reminded that I need to be making a batch for them.  They start out with subtle hints. “I really like the caramel pecan candies you make” or “Remember those truffles you made last Christmas? Those were so good.” When they do not receive a batch they escalate.  “When are you making your annual Christmas candy? You are making some this year, right?”  One of my favorites are these Amaretto Truffle Cups, made with a white chocolate mousse filling.  If you don’t want to use Amaretto you can substitute a teaspoon of almond extract to get almost the same flavor.

A rich truffle cup filled with a creamy almond flavored mousse.
Ingredients
  • 1 (14 ounce) bag white chocolate candy melts
  • 4 ounces heavy cream
  • 1 tablespoon butter
  • 2 tablespoons amaretto or one teaspoon almond extract
  • red paste food coloring
Instructions
  1. Melt 1/2 of the bag of white chocolate candy melts in the microwave for 30 seconds. Stir. Place in microwave for an additional 30 seconds. Stir. Spread chocolate on the bottom and sides of mini cupcake liners with a spoon. Place in freezer until firm. Meanwhile, add cream, butter and white chocolate to saucepan. Bring to a rolling boil, stirring constantly. Remove from heat. Add amaretto (or almond extract) and two drops red paste food coloring (or enough to reach the shade of red you desire.) Place truffle mixture in fridge for two hours. Remove from fridge, place in a pastry bag and pipe into chocolate cups. If you don’t have a pastry bag, just use a small cookie scoop and add scoops to the shells. Decorate with sprinkles if desired.
