Cheesy Beef And Mac Recipe

I may not be a fashionista, but I can whip up tasty meals using some of the fifteen blends of Mrs. Dash seasoning, making me a Dashionista!  One sneaky way to get some veggies into the meat lovers in my life is to whip up this Cheesy Beef and Mac recipe and throw in some veggies.  Since they would complain if we just had a veggie meal, I try to add veggies they like to casseroles. (Remember, if all else fails, puree the veggies and throw them in. They probably won’t suspect a thing.)  I added veggies most of the family likes, but feel free to replace and substitute with other veggies, like broccoli or whatever floats your boat.

Here’s what you need to make it:
ingredients

INGREDIENTS:

  • 2 Tablespoons Mrs. Dash® Italian Medley Seasoning Blend
  • 1 tablespoon Mrs. Dash® Tomato Basil Garlic Seasoning Blend, divided
  • 1 ¼ cups (10 ounces) elbow macaroni
  • ¾ cup (6 ounces) EACH  green pepper, tomato  and onion, chopped
  • 1 tablespoon minced garlic
  • 1/4  cup (2 ounces)  fresh basil, chopped
  • 1/3 (3 ounces)  cup flour
  • 1 cup (8 ounces) 2% milk
  • 1 cup (8 ounces) shredded cheese, your favorite flavor,  I use Italian blend but this needs a strong cheese to add flavor. I should have used cheddar.
  • 1 pound (16 ounces) hamburger meat, cooked and crumbled
Step 1 Beefy Mac and Cheese

Drain the beef and veggies after sauteing.

Chop the basil, tomato, mushrooms, onion  and pepper into pieces.  Cook the macaroni according to the package directions. While it is cooking, saute the hamburger, onion, pepper, garlic and Mrs. Dash® Italian Medley and Mrs. Dash® Tomato Basil Garlic.  Stir in chopped tomato and basil. Set this aside.

Beefy Mac and Cheese

Mix basil, tomato and Mrs. Dash with the meat mixture.

Make the cream mixture with  by combining  flour and milk in a medium-sized saucepan over medium heat.  Add  the milk gradually. Stir until smooth. Continue to cook, stirring constantly until mixture is thickened and bubbly. Remove from heat and add in the  cheese and  2 teaspoons Mrs. Dash® Tomato Basil Garlic. Stir until smooth.

Since I deal with Celiac issues with my daughter, I can also make this gluten free by using a gluten free pasta and leaving out the flour.  It won’t be as thick, but that is ok. Substitute a teaspoon of corn starch to make it thicker. Note : Mrs. Dash does not say it is gluten free, but it doesn’t  list wheat as one of its ingredients and has proven safe with us so far. Be sure to read all food labels carefully to avoid a reaction.  It doesn’t contain salt, so it is good for people on salt restricted diets.

I started using Mrs. Dash as a way to cut down on my salt intake. Now I use it because I love the seasoning flavor. I don’t miss the salt at all. I have tried almost all of the blends and have not been disappointed.

Yum, that cheesy beef and mac sounds good! I was thinking the Caribbean Citrust on some grilled chicken would be good, something simple for summer.
